So…what’s a girl to do when gorgeous, big, ripe avocados are on sale during “Hip Hip for Hummus Week”? Make guacamumus! Or hummamole! Whatever you want to call it, this fantastic marriage of my two favorite dips — hummus and guacamole — is definitely a winner. Hooray for dips that are fun to say, and to eat! You’ll love this Guacamummus or Hummamole (Avocado Hummus) Recipe! Ingredients: 1 avocado, peeled and pitted1 (15 oz.) can of chickpeas, drained1/2 cup fresh cilantro, chopped1/4 cup chopped red onion3 cloves garlic, peeled and smashed2 Tbsp. tahini (optional)1 Tbsp. olive oil1 lime, juiced1 tsp. cumin1/4 tsp. salt (more or less to taste) Directions: Combine all ingredients in a food processor and blend until smooth. Soul Warming Butternut Squash Soup for #SundaySupper (gluten free) — Cupcakes & Kale Chips The #SundaySupper Group is amazing! Isabel, aka Family Foodie, our fearless leader, is often asking us for theme suggestions. When it was suggested to do a #SundaySupper to help get the word out about relief efforts for Hurricane Sandy victims, the crew jumped in. Although my family and friends got through the storm safely, with only minimal losses (other than a loss of power, some for up to a week and a half), many of the places that I know and love have been devastated. There is actually a story as to why I chose this soup as my recipe for this Sunday Supper. By the next morning, we were hearing reports of it potentially taking days or weeks to get power back. I ATE THE SOUP! 24 hours later, the lights came back on. Because we were one of the quickest to have power restored, we were able to provide a place for family and friends to relax, stay warm, eat a good meal, take a hot shower, do laundry, and even a place for my grandpa to sleep for a couple nights. My I-thought-I-had-an-original-idea ice cream cone cupcake pan Don’t you hate it when you get all your ice cream cones filled with batter only to have them tip over and spill in the pan when you try to put them in the oven? I decided to make a pan prototype to bake my cones in to stop the spills and mess! Yup, I made a prototype. And I was going to mass-produce it and sell it on HSN and become a billionaire, er, or at least a thousand-aire. But my dreams were crushed when I realized someone else already designed one. So much for my big break. BUT considering I wasted so much time making my pan, I’m going to show you it anyway. I bought this cheap tin pan from the 99 cent store. I took a sharpie and measured out a 3 x 4 square grid. Once my circles were cut out I just flipped it over and put it on a cookie sheet. Brilliant, right? And just for fun I took a picture of what it looks like from the underside. So there you have it. And now for a 2nd tutorial on how to make Cupcake cones. Fill the cones with batter. The only problem with pie is that the crust always seems to get soggy before we can eat it all — there are just 2 of us you know. So today — as I was contemplating whether or not I should make a pie (and knowing that my husband would definitly want me to make a pie) — I decided to try something new… … mini pies! So much so, that when I have to write up the Links We Love at work each week I try to throw in one story about what's going on in the world of bees. It's gotten a little much though. I know. So to talk about bees without being a total drag, I've made a new sandwich to showcase their sweet, sweet nectar. So here's my spin... Ingredients: - about 4 slices fresh mozzarella - 2 hearty slices of a Bâtard - 5 slices of sopressata picante - 1 tbs of red pepper flaked butter (combine 1/4 teaspoon red pepper flakes with one tablespoon of real salted butter, MIX) - 1 tbs of basil infused honey (fresh basil leaves and tupelo honey Ok, so I'm totally obsessed with tupelo honey (and it doesn't have anything to do with my obsession for Van Morrison either. To make the basil infused honey, julienne about ten small basil leaves and stir them into a tablespoon of honey. Then add a layer of mozzarella. Then add some spicy sopressata.
