Margaret asked me if there was some way to make a quick cheesecake. “I’d love to see a cheesecake ‘in a minute,’” she told me. “Just a single serving size.” I love a cooking challenge so, with her mandate, I set out to create a simple dessert that: 1. The spoon in my mouth proves I achieved the desired results. You might wonder why I added the egg to the recipe. On busy work-week days, it’s important to have something that you can grab and take to the office. Some things to consider before you start microwaving: You can substitute high-fat cream cheese and sour cream for a lower-fat product. The ingredients coming together in the bowl before microwaving. 2 ounces cream cheese, softened 2 Tbsp sour cream 1 egg ½ tsp lemon juice ¼ tsp vanilla 2-4 Tbsp sugar replacement sub (taste as you go) Mix all ingredients thoroughly in a microwave-safe bowl. Optional: Top with fresh fruit, whipped cream and nut meal. Makes one, one-cup serving.

Nutella Mug Cake There are several food bloggers that I follow religiously. In fact I have a hard time concentrating at work until I read their posts each morning (ssshh!). And a lot of them just crack me up. The secret is this: Nutella Mug Cake. 'Baked' Oatmeal in a Mug I recently posted about Chocolate Cake in a Mug, where I showed you how to bake a single-serving chocolate cake in only a few minutes. That got me to thinking, would this work for baked oatmeal too? I adore baked oatmeal, but most mornings I don’t have the time to bake it. So I tried applying the principles of chocolate cake in a mug to baked oatmeal, and it actually worked pretty well! I still think oven baked oatmeal is the best, but when you’re in a hurry, this microwave version hits the spot. I was so disgusted that I couldn’t even bear to re-make the muffins. So I made cookies instead. Best call ever. I had filled muffin cups to almost three-quarters full in an effort to get big puffy domed-top muffins. The cookies more than make up for the muffins, and if I had to choose, cookies trump muffins anyway. They’re supremely moist, soft, and chewy without being cakey. They’re loaded with texture from the carrots, oats, raisins, and butterscotch chips. I’m a raisin lover, and after last week’s Oatmeal Scotchies, I’ve also been on a major butterscotch kick. Greek Yogurt Pound Cake | Lawfully Wedded Wife I was looking forward to this past weekend because the weather was finally feeling like spring and one of the biggest and oldest festivals in Atlanta was happening! As you can see from that picture, there were so many beautiful dogwoods blooming! Dogwood flowers are like the iconic symbol of springtime in Atlanta. DC gets cherry blossoms, Washington gets apple blossoms, Texas gets blue bonnets, and we get DOGWOODS! The festival lasted three days but Jason, Ashley and I headed out for the fun festivities on Saturday. Did you know that Atlanta has the most tree cover of any major city in the US? This festival is located in Piedmont Park every year, which is pretty much our version of Central Park. As you can see, there was a ton of rides and fun things for kids to do. In the main meadow next to the rides the Disc Dog Southern Nationals tournament was being hosted! I’ve never seen a frisbee dog competition before and it was SO cool! She did such a great job, it looked beautiful at the end!
