Minute Microwave Cheesecake

Minute Microwave Cheesecake
Margaret asked me if there was some way to make a quick cheesecake. “I’d love to see a cheesecake ‘in a minute,’” she told me. “Just a single serving size.” I love a cooking challenge so, with her mandate, I set out to create a simple dessert that: 1. The spoon in my mouth proves I achieved the desired results. You might wonder why I added the egg to the recipe. On busy work-week days, it’s important to have something that you can grab and take to the office. Some things to consider before you start microwaving: You can substitute high-fat cream cheese and sour cream for a lower-fat product. The ingredients coming together in the bowl before microwaving. 2 ounces cream cheese, softened 2 Tbsp sour cream 1 egg ½ tsp lemon juice ¼ tsp vanilla 2-4 Tbsp sugar replacement sub (taste as you go) Mix all ingredients thoroughly in a microwave-safe bowl. Optional: Top with fresh fruit, whipped cream and nut meal. Makes one, one-cup serving.

'Baked' Oatmeal in a Mug I recently posted about Chocolate Cake in a Mug, where I showed you how to bake a single-serving chocolate cake in only a few minutes. That got me to thinking, would this work for baked oatmeal too? I adore baked oatmeal, but most mornings I don’t have the time to bake it. So I tried applying the principles of chocolate cake in a mug to baked oatmeal, and it actually worked pretty well! I still think oven baked oatmeal is the best, but when you’re in a hurry, this microwave version hits the spot. Apple Banana “Baked” Oatmeal in a Mug 1/2 cup quick cooking oats 1 tbsp ground flax seed 1 egg 1/2 cup milk 1/3 of a banana, mashed 1/4 tsp cinnamon 1/2 of an apple, chopped 2 tsp honey Add oats, flax, egg and milk in a mug.

60 Second Chocolate Chip Muffin Let’s talk about Energy… Have you seen mine? Pretty sure it ran off to an exclusive resort in Tahiti somewhere, and is gettin’ rubbed with suntan oil by the one and only Christian Bale… Holy Batman! I’m sure it probably hates me and never wants to come back after that Minnie Mouse party…Especially after little miss received a bicycle and has decided it’s much more fun to ride when mom pushes instead of peddling. Dear Energy, i’m so sorry but I need you back. Mind you I still have a toddler, messy house, new baby to prepare for, and I’m as big as a walrus?! And this walrus is hungry! No more PB&J’s, smoothies, and cereal. Let’s not forget it’s been too long since I wore makeup…And I’m pretty sure I wear the same sweat pants every other (each?) Listen my little Energy, I promise I’ll give you something to come back for. And it won’t require much work from you at all. At least tell me you will think about it? 60 Second Chocolate Chip Muffin Ingredients: 1 tsp. melted and cooled coconut oil 1. 2.

Banana Oatmeal “Cookies” | Bionic Bites I’d very loosely call these treats cookies. Why? The recipe is basically two ingredients, oats and bananas, plus a few add-ins. I found this recipe on The Burlap Bag when looking for a non-banana bread recipe to use up all my overripe bananas. If gluten is an issue for you, these “cookies” are also gluten-free. I hope you try them. Banana Oatmeal “Cookies” Adapted from The Burlap Bag Yields: 16 small cookies Ingredients 2 large overripe bananas 1 cup quick oats 1/2 teaspoon cinnamon 3/4 teaspoon sugar pinch of salt 1/4 teaspoon butter 1/4 cup chopped walnuts 1/4 cup raisins butter or oil to grease two cookie sheets Preparation 1. 2. 3. 4. 5. 6. 7. 8. Whole Wheat Carrot Cake Pancakes with Cream Cheese Syrup ~~~~ This post was originally posted in the spring of 2012, this week this recipe was an assignment for Sundays With Joy so I am re-sharing it!~~~~ Easter is almost here! Do you celebrate? Are your little ones excited for the Easter Bunny? I have one child who is pumped! His words the other night "Mama.... the Easter Bunny just FREAKS me right out!" He's had nightmares about the Easter Bunny recently as well. I suspect in his mind he pictures this.... (and just for the record NO he has not see that movie I'm just joking...) My plan is to rent Hop this week and hopes that he will like it, lose his fear, and be excited for Easter when he goes to bed on Saturday night. If this keeps up, Saturday night will be a long one... Yesterday morning the kids and I had a little fun in the kitchen. I say to the boys "How about Carrot Pancakes?!?!" So after some convincing they helped me whip up a quick batch as a sample. And to their surprised LOVED them. Directions: Mix together wet and dry ingredients.

Soft and Chewy Spiced Carrot Cake Cookies Soft and Chewy Spiced Carrot Cake Cookies These cookies weren’t originally in my plans. They’re the result of a carrot muffin failure. I was so disgusted that I couldn’t even bear to re-make the muffins. So I made cookies instead. Best call ever. I had filled muffin cups to almost three-quarters full in an effort to get big puffy domed-top muffins. The cookies more than make up for the muffins, and if I had to choose, cookies trump muffins anyway. They’re supremely moist, soft, and chewy without being cakey. They’re loaded with texture from the carrots, oats, raisins, and butterscotch chips. I’m a raisin lover, and after last week’s Oatmeal Scotchies, I’ve also been on a major butterscotch kick. Bland carrot cake is so unappetizing and as I mentioned when I made Carrot Cake and Cinnamon and Spice Sweet Potato Bread, orange vegetables can stand up to a lot of spices without becoming overpowered. The cookies are pleasantly spiced, and just robust enough, but not overdone. Print Save Directions:

The 23 Most Perfect Foods In The Universe Quinoa Breakfast Bake This recipe and photo were created by contributor Katie Morris of Katie at the Kitchen Door. Learn more about Katie and this recipe by checking out her accompanying post. Like many people, I've committed to finally getting fitter/losing weight/eating better this year, so I started off January with a two-week whole-foods "cleanse" to help me focus on what I should be eating (you can find the recipes and menus here and here). Officially, I'm done with the cleansing part, but I'm trying to make the whole-food diet stick. While doing this, I've realized that starting the day off on the right foot is crucial: If I don't start off with a healthy, filling meal, the rest of the day is basically a wash. Recipe: Quinoa Breakfast Bake Photo by Katie Morris Serves 4-6 What You'll Need: What to Do: Preheat the oven to 350 degrees. Need some more healthy breakfast inspiration?

Greek Yogurt Pound Cake | Lawfully Wedded Wife I was looking forward to this past weekend because the weather was finally feeling like spring and one of the biggest and oldest festivals in Atlanta was happening! As you can see from that picture, there were so many beautiful dogwoods blooming! Dogwood flowers are like the iconic symbol of springtime in Atlanta. DC gets cherry blossoms, Washington gets apple blossoms, Texas gets blue bonnets, and we get DOGWOODS! The festival lasted three days but Jason, Ashley and I headed out for the fun festivities on Saturday. Did you know that Atlanta has the most tree cover of any major city in the US? This festival is located in Piedmont Park every year, which is pretty much our version of Central Park. As you can see, there was a ton of rides and fun things for kids to do. In the main meadow next to the rides the Disc Dog Southern Nationals tournament was being hosted! I’ve never seen a frisbee dog competition before and it was SO cool! She did such a great job, it looked beautiful at the end!
