Minute Microwave Cheesecake
Margaret asked me if there was some way to make a quick cheesecake. “I’d love to see a cheesecake ‘in a minute,’” she told me. “Just a single serving size.” I love a cooking challenge so, with her mandate, I set out to create a simple dessert that: 1. Is made in the microwave in literally about a minute, chilled for 60 minutes and then served up. 2. The spoon in my mouth proves I achieved the desired results. You might wonder why I added the egg to the recipe. On busy work-week days, it’s important to have something that you can grab and take to the office. Some things to consider before you start microwaving: You can substitute high-fat cream cheese and sour cream for a lower-fat product. The ingredients coming together in the bowl before microwaving. 2 ounces cream cheese, softened 2 Tbsp sour cream 1 egg ½ tsp lemon juice ¼ tsp vanilla 2-4 Tbsp sugar replacement sub (taste as you go) Mix all ingredients thoroughly in a microwave-safe bowl. Makes one, one-cup serving.

Caramel Apple Mug Cake Here is another scrumptious, convenient (maybe too convenient!) mug cake creation. I have to admit, the main motivation for making homemade applesauce was so that I could make this caramel apple mug cake. This cake is kind of a fusion of cake and apple pie because it’s spongy and light like cake but there are bits of cooked apple and it’s all brought together with a lovely caramel sauce topping like pie. I melted some wrapped caramels by popping them in the microwave for a few seconds, because that is what I had on hand, but a caramel sauce would have probably been ideal. Whatever caramel you have should do the trick though.

Chocolate Chip Cookie in a Cup Chocolate chip cookies are my favorite, and my kids’ favorite too. So, after seeing a few recipes for individual cakes and brownies made in the microwave, I was inspired to develop a recipe to make our favorite treat in just a few minutes. 5 Minute Microwave Berry Cobbler You might hate me for this. Because, to be honest, I sort of hate myself for this. Unlike those Smarmy Mug Cakes, that we have all been desperate enough to attempt at least once in our lives, this is really good. So good, that I even found myself “recipe testing” it about 17 times in the last month.

Plus, there’s no baking involved, no pastry either – whip some cream, beat in some cream cheese, melt some chocolate, sweeten it with some sugar, top with fresh raspberries, and refrigerate until set.

'Baked' Oatmeal in a Mug I recently posted about Chocolate Cake in a Mug, where I showed you how to bake a single-serving chocolate cake in only a few minutes. That got me to thinking, would this work for baked oatmeal too? I adore baked oatmeal, but most mornings I don’t have the time to bake it. So I tried applying the principles of chocolate cake in a mug to baked oatmeal, and it actually worked pretty well! I still think oven baked oatmeal is the best, but when you’re in a hurry, this microwave version hits the spot. Like any oatmeal, you can add or change the flavours to suit your taste.

Gooey Chocolate Cake Cups for Two {in 2 minutes!} Each Tuesday for the past two weeks, my family has been glued to ABC, watching The Taste, a new reality TV cooking show. Professional and amateur cooks compete for a spot on a team by having their dishes scrutinized by four judges in a blind taste test. Have you watched it? What I find most entertaining is what Nigella Lawson and Anthony Bourdain, both judges and Executive Producers, bring to the show. Nigella speaks in her beautiful British accent, and is gorgeous (un-Photoshopped tummy and all) and so very sweet.
