Two-Bite Strawberry Hand Pies This post comes to you from damply beautiful Seattle, Washington! Yes, kids, I am in Seattle for BlogHer Food 2012 and not just as an attendee, but I am speaking! I am nervous, but terribly excited, and ready to get the party started! The last month has been a CRAZY travel month for me. First, I went to Camp Blogaway, then I spent 6 days in Tokyo (expect a few Japanese themed recipes in the future – the place is life changing!) to make: cobbler baked in jars I made these for the Seattle Bake Sale for Share Our Strength organized by Frantic Foodie (thanks Keren!). I had so much fun making pies in jars that I figured this was the perfect opportunity to bake something else in jars. This time I used half-pint wide mouth jars, a nice size for a bake sale. (Half pint jars washed and drying.) I used the blueberry cobbler recipe from Baking Illustrated.

The Best Caramel Cake I've often tasted caramel cake on road trips in the southern states and they are almost always look very rustic and homemade, often with the caramel just poured over the cake in a simple but appealing presentation. I wanted to make one that looked a little more polished to maybe use as a celebration cake for a birthday or anniversary dinner. This one worked out quite well. The moist vanilla cake gets filled with layers of homemade caramel sauce, then covered in a caramel buttercream frosting and drizzled with a little more caramel sauce. Pita Bread Recipe This pita bread recipe makes amazingly soft and fluffy pitas. If you’re in the U.S. and are used to the cardboard rounds sold at supermarkets here as “pita bread,” you’ll be amazed once you try the real thing. The yeasty, delicious aroma, the chewy texture and the delicate taste will get you hooked immediately. There’s one caveat though: once you try these, you won’t be able to go back to eating supermarket cardboard pita. The dough in this pita bread recipe is mixed by a bread machine. I own a Sunbeam bread machine, and the small investment (around $50) was very much worth it.

Homemade Raw Vegan Ice Cream Bars! Yes, another ice cream recipe! Funny that I am posting this today, because I started a juice fast this morning! I feel like I really need it because (believe it or not) I have been eating a lot of heavy vegan food lately…Good thing that ice cream does not go bad, coz these little guys will have to wait for me a while in my freezer Anyway, back to the ice cream! I got these cool molds to make ice cream bars at home and I wanted to make a raw vegan version of the classic ice cream I used to eat as a child.

The Londoner: Slutty Brownies Now I don’t want to over sell this, so I’m going to be conservative and simply say, that these are… The Best Brownies In The WORLD. I know, big statement. They’re called Slutty Brownies because they’re oh so easy, and more than a little bit filthy. They’re best served warm from the oven, with good quality vanilla ice cream (devastatingly I didn’t have any in the freezer this time, so I guess I’ll just have to make them again). They take about 45mins to make, including baking time.

Homemade Cereal Bars Recipe Homemade cereal grain bars are even tastier than the boxed version, but so much healthier. These are made with oats, flaxseed meal, and honey, and easily made vegan or gluten-free. My kids love nutrigrain and other fruit cereal bars. At first glance, they look like a healthy easy lunchbox option. Emergency Small Batch Brownies Do you ever have days where you feel like you need a brownie so badly that you’re sure the sky will fall, continents will crumble, and gravity will release it’s sticky grip and throw us all into chaos if you don’t get one?
