BEET BAGELS WITH WHIPPED BLUE CHEESE Beet bagels. I know. Like rubies in bread form, am I right? These gorgeous, gorgeous beet bagels came to me, as the Samoa Cheesecake Cups of yore, in a dream. This dream started with a salad. One that I ate alone in a Paris bistro years ago. (You might remember when I waxed poetic about the Hash Brown Crust Quiche last year? Though I had good friends in Paris, most of my fondest memories are of strolling alone and stumbling across something so lovely, so perfect, that it seemed like I was the first to discover the wonder of it. At the time I was nineteen-years-old and did not know how to cook. But these bagels? Friends, cue the choir. Toasted and smeared with whipped blue cheese with a hint of orange, they make the most perfect breakfast. P.S. P.P.S. Okay guys, I'll admit that baking with yeast is scary in the beginning but then you suddenly have a dozen homemade bagels and it's like I MADE BAGELS!!! For the Beet Bagels If you have a stand mixer, it will make your life easier.

Truffled Potato & Goat Cheese Flatbread Weeknight Dinner Recipes from The Kitchn Pizza and flatbreads are in constant dinner rotation at my house. I'm always shocked at how quickly homemade dough comes together (not to mention that it freezes like a dream) so we always have an extra round or two on any given weeknight. And because you can justify putting practically anything on top, there is nothing you can't throw in the mix — even potatoes and truffle oil! What is flatbread exactly? This flatbread recipe is a twist on my perfected pizza dough, however I reduced the amount of yeast and added a splash of garlic-infused olive oil. If you're in a hurry, store bought pizza dough works great, too; you could even use pita bread in a real pinch. Truffled Potato & Goat Cheese Flatbread Serves 2 to 4 for dinner, or 6 to 8 as an appetizer For the dough: 1 1/2 teaspoons active dry yeast 1 1/4 cups warm water 16 1/4 ounces bread flour (about 3 3/4 cups) 1 1/2 teaspoons kosher salt 2 tablespoons garlic-infused olive oil (I like Trader Joe's) Remove flatbread from the oven.

I did drink all the beer though, so don’t worry, none of it went to waste. We managed to come out of the “San Diego Blackout of 2011″ in one piece, and life rolls on……….. When I first posted this cook my pantry project, I had a several suggestions to make Cuban style black beans. I figured the slow cooker was another easy way to get around “real” cooking during the heat wave, so I gave it a go. I used THIS recipe (Spicy Black Beans and Rice) as my starting point, and pretty much just winged it from there. Another weekend is upon us already.
