Are you drooling yet? ‘Cause I have been, ever since I laid eyes on these Gingersnap Milkshakes that Lisa sent over for her installment in our 12 Tastes of Christmas series. Lisa is not only an amazing cook, food stylist and photographer…I’m lucky to get to call this incredible girl a friend. We bonded at Alt Summit last year, and I got to hang with her during my San Fran trip earlier this month. Her blog, With Style & Grace, inspires “a new way of healthy living with easy and delicious gluten-free recipes.” Sounds like the perfect way to kickoff 2012, if you ask me. I love this time of year when we gather at holiday festivities, share family recipes, toast the New Year and celebrate being together. When entertaining during the holidays, I like to change up the dessert course by serving these mini gingersnap cookie milkshakes. Honey Mustard Chicken with Bacon and Mushrooms | Everyday Home Cook - StumbleUpon “This is probably my favorite way to eat chicken.” That’s a quote from my husband the last time I made Honey Mustard Chicken with Bacon and Mushrooms for dinner. Marinate some chicken breasts in honey, mustard, and lemon, then top with bacon, mushrooms and cheese… How could that go wrong? I love to serve this dish with a side of oven fries and a crisp lettuce salad. Begin by making the marinade for the chicken. Here’s what you’ll need for the toppings: sliced fresh mushrooms, mostly cooked bacon (it will cook more when baked in the oven), grated cheddar, and fresh parsley. After the chicken has marinated, heat a small amount of oil in a large skillet. Scrape out the pan, and toss in the mushrooms. Assemble the chicken in a large baking dish. After baking for about 20 minutes, chop up some fresh parsley and sprinkle atop before serving! Being thrifty and a DIY adventurer, I set out to find a pumpkin spice latte recipe that could easily be done at home. Also- a pumpkin spice latte is the perfect excuse to cuddle with someone. What you'll need:2 1/4 cups milk2 1/2 tablespoons canned pumpkin2 tablespoons sugar 1/2 teaspoon pumpkin pie spice or more if you like the spice! Directions: In a saucepan combine milk, pumpkin and sugar and cook on medium heat, stirring, until steaming. Remove from heat, stir in vanilla and spice.To froth up the mixture, you can transfer to a blender for 15 seconds or simply whisk the mixture at a fast pace until it becomes foamy. How to Make Marshmallow Fondant This time I decided to make it with those mini fruit flavored marshmallows. I had to sort them by colour first. I figured they would add a little bit of flavor to the fondant so I wouldn't have to add much flavoring oil. I use gel colours to dye my fondant but regular food colouring will work too. You won't be able to get really dark colours without making your fondant sticky, but for lighter colours you can just even it out with more icing sugar. I also had lemon oil and coconut flavoring on hand.. oh la la the value brand (which still works fine). Step One: Take a couple of handfuls of marshmallows and put them in a microwave safe bowl. I like to make smaller batches because its easier to add the colour to the melted marshmallow than it is to work the colour into the fondant later. Step Two: Stick the marshmallows in the microwave for ten seconds at a time until the are puffed up and easily stir into a goo with a wooden spoon. Not so much a recipe… More of a “why have I not been doing this for years?” post. Remember back when I made caramel sauce? For some strange reason, I haven’t made it since then. The other day, I decided to make caramel sauce. I’d also been pouring the leftover coffee into an ice tray and freezing it in the off hand chance I’d have time to make iced coffee. See where I’m going? I didn’t have time to cold brew, so I made coffee in the french press, poured it into a pitcher, and let it rest in an ice bath. Once it was chilled, I took the caramel sauce and drizzled it in some glasses. Totally fancy, I know. Then I added the coffee cubes, my favorite creamer, then the coffee. Lovely. For this batch, I didn’t let the coffee cool enough, so the caramel drizzles disappeared when I poured the coffee in. SugarBlog - The Ultimate Ice Cream Cake Cookie&Pie This is by far the sweetest of all things I have ever made. Sweet as in the adjective, adverb and noun. :) Let me tell you from bottom layer to top layer pie crust, chocolate chip cookie dough, cake icing, vanilla ice cream, rainbow chip cake, more cake icing and sprinkles. Big, fat, rainbow sprinkles! Quite possibly the Turducken of Sweets. I thought of this concoction a few months ago while judging myself for how indecisive I am... And so.... The closest I got was CakeSpy's Triple Threat. Now.. back to me...I, of course was going to miniaturize mine... and add ice cream! I took lots of pictures and got really giddy several times during this process. Deep Dish Fruit Pizza My sister-in-law Missy first introduced me to the concept of fruit pizza years and years ago, and here’s how: she brought one to my house and I proceeded to eat the whole thing. But it was small. And I was nursing. My mammary glands made me do it. I whipped up a whopper of a fruit pizza a couple of weeks ago using my good ol’ standby sugar cookie recipe…and it was so darn good in such a naughty, naughty way. Feel free to halve the recipe below and press into a smaller pan, or just split the full recipe in half and roll out two thinner pizzas. This is one of those fun, throw-together treats that’s perfect for everything from a slumber party to a baby shower. Sorry I said mammary glands. The Cast of Characters: my sugar cookie dough (recipe below), marshmallow creme, cream cheese, peaches, kiwi, blueberries…and whatever other fruit you’d like! Now, you could divide the dough in half, then roll out each half into thin, round pizzas. Or you could do what I done did… I love this pebbly texture.
