Saturday, November 18, 2006 How to make orangettes: Slice ends off four oranges, score the peel from one end to the other, and remove the peels from the oranges. Slice the peels into thin strips and trim the edges. Using a medium size pot, place the peels in boiling water and blanch them for a few minutes. Prepare the simple syrup by combining 8 ounces water with 8 ounces sugar in a saucepan. Melt 16 ounces dark chocolate over a double boiler. Recipe adapted from here.

Chocolats fins maison Je n'ai fait qu'une petite quantité de chocolat pour cette première fois (j'ai un moule en polycarbonate qui me donne 35 pièces) et j'ai décoré de chocolat contrasté pour différencier les saveurs ; un petit coeur en chocolat blanc pour ceux à la ganache-vanille, un coeur au chocolat au lait pour ceux au praliné et un coeur noir pour ceux à la ganache-orange. J'ai procédé au tempérage de chaque variété de chocolat (en suivant les recommandations du Chef Morel ) et le seul qui semble avoir blanchi légèrement est le chocolat au lait (je l'ai peut-être trop chauffé). Par contre, les deux autres ont donné un résultat parfait, lisse et très brillant. Comme je ne veux pas manger tous ces chocolats trop rapidement, je vais essayer de les congeler. Il parait que si on les enveloppe très bien et qu'on les décongèle lentement ; 12 heures au frigo et 3 heures température ambiante, le résultat sera bon.

Well, I hesitate to even call it a recipe - it’s so easy. All you do is: Hard boil some eggs . Since the soy sauce is salty enough, there’s no need for extra salt or other seasonings, which makes them very portable - therefore great for picnic or school outing bentos. These are even easier than the lazy tea eggs, but they don’t really keep, so you do have to make them when you need them. They are very pretty when cut in half or in slices, and make a nice gap filler in a regular bento box. Flavor wise, miso marinated eggs or the lazy tea eggs, but both methods take some time.

Caramels à la framboise (mous ai lamponi) Versione italiana più giù La Befana est passée cette nuit et nous a laissé quelques friandises à l'ancienne ;-) Ces caramels sont nés dans le cadre d'une opération très sérieuse: vide frigo-congélateur-placard avant Noël et l'arrivée de la famille :-) Je sais, les framboises ne sont pas du tout de saison mais j'en avais une grande quantité de surgelées (vous en verrez encore d'ailleurs). Depuis un bout de temps j'avais remarqué ces caramels à la framboise dans le Larousse des Desserts, un coup de coeur de Pierre Hermé (la recette est de Georges Gobet, un pâtissier suisse). Ce n'est pas particulièrement difficile (il suffit de suivre les instructions ;-) par contre, comme toujours quand on travaille le sucre, il faut un peu de patience. Vu les quantités, vous pouvez en distribuer comme cadeau gourmand à vos amis (ravis). Chocolate Truffles Recipe : Alton Brown Directions Place the 10 ounces of chocolate and butter in a medium size glass mixing bowl. Microwave for 30 seconds. First of all, according to your friends, you no longer have a “job”. What they call a job requires an office – preferably, one with stale coffee and decade-old carpeting. So, when they call you in the middle of the day and invite you out to lunch, grab a coffee or go lamp shopping for their new house, don’t expect them to take your “I am busy!” response too seriously. Besides, what work? When I told you about my recent career change, you expected my posts to be more frequent, didn’t you? And not to worry; I still have the same intention. Maybe, after working day and night all those years (sometimes even without vacation days), I’ve gotten used to the comfort of my home and became a bit, ummm, you know, lazy… Maybe, I have been spending way too much time on eBay for antique bakeware. Daring Bakers Août 2011 - Les chocolats fins Le défi du mois d'août chez les Daring Bakers était de faire des bonbons et des chocolats. Voilà qu'après un mois de pratique et de recherche de trucs et conseils sur le net, je suis devenue très à l'aise avec le tempérage du chocolat. Je me suis amusée à faire des tas d'expériences et finalement, je présente ici le résultat final. Pour ma participation au défi j'ai élaboré une sélection de chocolats qui, en plus d'une bonne maîtrise du tempérage, ont demandé une variété de techniques de décorations ainsi que la création de garnitures originales et savoureuses. Il serait trop long de tout détailler par écrit alors j'ai mis beaucoup de photos. On peut cliquer dessus pour agrandir et mieux voir les détails. J'ai utilisé 3 techniques de décoration : 1. au cornet 2. au pinceau 3. à la brosse . Les garnitures sont à base de crémeux aux fruits frais de saison ; cassis/zeste de citron, pêches/feuilles de menthe fraîche, et kiwi/vanille.
