Pumpkin Roundup It’s time to whip up all those pumpkin treats you’ve been longing for all summer long! Ahhhh…pumpkin season has arrived! This is my favorite season to bake. I was super excited to hear that the annual Morton Pumpkin Festival starts today and runs through Saturday. I want to share with you some of my favorite pumpkin recipes that I posted last fall before I start with a new round of pumpkin recipes. Pumpkin Scones: Moist and delicious pumpkin scones, with the sweet taste of pumpkin and spices of fall, are brushed with a scrumptious powered sugar and drizzled with a spicy glaze. {recipe} Not Your Childhood Chicken Potpie | The Gonzo Gourmet Growing up, chicken potpie meant a Swanson’s frozen dinner, pulled hot from the oven before my parents escaped for a night of freedom. Those nights meant freedom to my sister and me, too: babysitters! The Love Boat! Fantasy Island! I wanted to recreate the sheer joy, if not the actual taste, of that childhood meal, with a crust that could be drenched in gravy and still retain a crunch, vegetables that stood on their own but melded well together, and chicken that added a savory layer of its own. Don’t get me wrong, I love pumpkin as much as anyone else, but to me September is apple season. I was thinking about how often apples get overshadowed by pumpkin a few weeks ago when my husband asked me if I wanted to attend a dinner party with some of his coworkers. “Hrmmm. Maybe…”, I said. It took me a while to decide on an approach for these cupcakes. Ultimately, I decided the best way to pack that punch of apple flavor into a cupcake was to use apple pie filling. I was apprehensive while putting these cupcakes together. In the end, they didn’t. They tasted approximately a million times better than I had imagined. Grilled Guacamole Recipe Grilled Guacmole? Ummmm. Heck yes!! I made this recently for Tasty Kitchen and it was gooooood. You need to make it. And… wanna hear something really exciting. Okay….here’s the step by step for Grilled Guacamole: You need to prepare either your indoor or outdoor grill. Once the avocados have some grill marks, throw a few slices of red onion on the grill to char. Next up, let’s grill some tomato quarters! Once we’ve got everything grilled and set aside, place the avocado into a bowl and give it a quick mash. Next, grate some garlic over the avocado. Be sure to get all that fabulous garlic from the bottom side of your grater. Next, juice a lime or two over the avocado. Add the chopped red onion. And then the tomatoes!
