Twice Baked Potatoes, Two Ways Hiiii Abby!!! This blog post is dedicated to Abby. Abby emailed me a few weeks ago requesting a recipe that could be made in the microwave. You see…Abby is shacking it up in a dorm this year with only two kitchey-type tools at her disposal: a microwave and a mini-fridge. And since she wants to spend her money on more important things like booze, shoes textbooks, she wanted it to be budget friendly. No biggie, Abby; I got you, gurrrrl! Meet the Twice Baked Potatoes. I made ‘em two ways: decadent and amazing (bacon, cheddar, jalapenos, sour cream) and healthy and good (yogurt, chives, zucchini). I’m not even gonna pretend the healthy way tastes better. You’re gonna start by forking the potatoes. Now, pretend you’re in a video game. If you’re going right (oven), then put them on a baking sheet, season them with salt, pepper and olive oil and bake. If you’re going left (microwave), you’re going to place them on a microwave safe plate, season them with salt, pepper and olive oil and nuke. P.S.

Cinnamon Toast Rolls The USDA released its new food pyramid the other day (which is actually a plate now instead of a pyramid), and I am sorely disappointed to report that cinnamon rolls did not appear anywhere on that plate. I think by now most of us know what should be on our dinner plate in terms of healthy, well-rounded nutrient-laden meals, but it is my considered opinion that our breakfast plate should include cinnamon rolls now and then. And not just any cinnamon roll, mind you, but how ‘bout a homemade cinnamon roll hybrid that is a cross between a cinnamon roll and cinnamon toast, is super easy to make and gosh darn delicious. In honor of their ancestry, I call these little gems cinnamon toast rolls, and here’s all you need to make them… Yep. Trim the crusts off of the bread Roll the bread really flat Brush both sides of the bread with butter Sprinkle with cinnamon sugar Roll in any fashion you like (I’ve also folded them into little triangles) Cinnamon Toast Rolls Click here for a printable recipe

Crazy Domestic: Melted Snowman Cookies I saw a picture of these the other day on Allrecipes.com and thought it was such a cute idea, I had to try it. After googleing it, I found a good tutorial on Stacy's Sweet Shop. I modified a few things to make it more simple for me (less homemade more store bought). To see the original Melted Snowman Cookie, and meet the inventor herself, go check out Meaghan (great name) @ The Decorated Cookie! Here's what I used: •1 package Betty Crocker Sugar Cookie Mix•10 large marshmallows•Betty Crocker Cookie Icing (white and orange)•Wilton Decorating Icing Tubes in Black, Red, Green, Blue and Pink***it would have been a lot cheaper if I had just made the icing myself, see Stacy's tutorial for a good recipe)*** Here's what I did: •Mix cookie mix according to directions, or prepare your favorite cut out sugar cookie recipe, then just grab a golf ball sized chunk and squish it down until it's about 1/4-1/2 inch thick. Cinnamon Sugar Pull-Apart Bread I’m sorry. I know it’s Monday morning and you probably came here for some pretty pictures of food that you could glance at, and then move on with your day… and here I go thrusting warm, soft cinnamon sugar bread in your face. It’s not fair. I know it’s not fair. You don’t deserve this sort of torture. This bread hits all the comfort spots in my soul. I’m sorry and you’re welcome and I love you. Let’s start at the beginning. I did this all without the use of a stand mixer and dough hook. This dough can be made and left to rise , then refrigerated overnight for use in the morning. This is the dough just before it’s left to rise. After the dough has rested and risen for an hour, I knead it in a few tablespoons of flour. This is the part in the bread process where you can wrap the dough and place it in the fridge to rest overnight. I worked with my dough right away. I can’t even deal. I sliced the dough, vertically, into six long strips. After 30 minutes in the oven… oh man…. bread heaven.

Gooey Chocolate Chip Sandwich Bars Gooey Chocolate Chip Sandwich Bars… Cookies for Kids’ Cancer Cookbook September is Pediatric Cancer Awareness month, and today I’m sharing some Gooey Chocolate Chip Sandwich Bars. What do these goodies have to do with cancer? The Gooey Chocolate Chip Sandwich Bars come from the “Cookies For Kids Cancer: Best Bake Sale Cookbook.” The Cookies for Kids’ Cancer cookbook provides directions on how to hold a bake sale, signage, and lots of recipes and photos. These are slab cookies. They’re a little chocolatey. So let’s talk about the makeup of these bars. I love the sort of natural, rustic crackle look on the tops of the bars. And there they are… my “neatly” cut Gooey Chocolate Chip Sandwich Bars. I’m giving away three copies of the Cookies for Kids’ Cancer cookbook, courtesy of Wiley Publishing and three OXO Good Grips Good Cookie Spatulas, courtesy of OXO.

How to Make Pizza Without Dough | « LXRCUISINE I was getting kind of sick of ordering delivery pizza (this happens at least 2-3 times a month). It was time to put a spin on gourmet pizza, but I just didn't know what it would be. Without pizza dough or an oven that is capable of creating the perfect pizza crust (I don't have an oven that can go up to a 1000 degrees), I decided I would use potatoes instead. This recipe is elegant enough to serve at a dinner party, but easy enough that you can cook it within 5-15 minutes. For 4 small, personal sized pizzas 4" in diameter, you will need: 2 large potatoes peeled and cleaned4 teaspoons salt (to flavor the potatoes) I'm doing four different flavor combinations here, and the measurements for each combination will top 4 small pizzas or 1 large pizza. Cheese & pepperoni pizza: 3/4 cup mozzarella cheese1/4 cup marinara sauce10 slices of pepperoni (or as much as you like)7-8 leaves of fresh basil Mushroom swiss and ham pizza: Shrimp scampi pizza: Bleu cheese & arugula pizza: Thanks for reading.

Tags: Appetizer LaSaGnA TiMpAnO I went to see tUnE-yArDs on Monday night with some friends, and as always we wanted to cook a meal that somehow related to the show we were heading to. Sometimes this is hard to do, but other times it seems to come naturally. Finding culinary inspiration in Merrill's lyrics seemed like it would be tough, but my sister knew what she wanted to make without hesitation. "How about something layered, because of all the vocal and instrument layering in the music?" Start by making a lasagna crust. Finally got it together. Now it's easy, just start building the layers! Alfredo sauce with some salami goes first. After 3 alfredo layers, I switched to pesto. A cheese only layer, just for fun. Tomato sauce is last. It's important to press things down as you go. In my opinion, it can't be lasagna without at least a little ricotta! I painted on some alfredo at the end as a glue. All sealed up. After baking. The flip is always a scary moment. Unveiling. A thing of beauty. Cutting is another tense event. Glorious!

Healthy Baked Chicken Nuggets | Ginas Skinny Recipes Chunks of all white meat chicken breasts coated in breadcrumbs and parmesan cheese then baked until golden. An easy chicken recipe your whole family will love. What can be more kid friendly than chicken nuggets, even the pickiest kids like them. Serve them with ketchup, bbq sauce or whatever you like to dip your nuggets into. Adults can serve them over your favorite salad for a satisfying lunch. Kids love finger foods or anything you can eat with toothpicks so when my daughter was young I would make her a dish of bite sized goodies she liked such as tomatoes, olives, pasta, etc. and served them with toothpicks and she always cleaned her plate! Once I'm in breading mode I usually make breaded zucchini sticks as well and bake them all at the same time along with some pasta and a salad for a complete meal. Double these for more or make half for less servings. Ingredients: Preheat oven to 425°. Put the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another.
