I don't care for pasta, but I really love kelp noodles and enjoy them occasionally. Here are some recipes that I've been meaning to post for a while (meaning from the middle of summer - thats how behind I am, and a few recent ones). I've done posts on kelp noodles before. Toss with zucchini or kelp noodles. Spice It Up! For a little variation, add chopped red bell pepper, tomato, fresh basil, chives, and parsley. After years of having no energy throughout the day, breakfast is now my favourite meal. I never skip breakfast anymore! I started making Vegan Overnight Oat Parfaits last Spring as a fun way to spruce up my breakfast. Before Bed: Prep your Vegan Overnight Oats in a bowl and place in the fridge- no cooking required. My go-to Vegan Overnight Oats recipe:1/3 cup regular oats 1 tbsp-2 tbsp chia seeds (thickens mixture overnight) 1-1.25 cup non-dairy milk (I now use Eden organic soy which has 12 gram protein!) In the morning: Process your frozen banana in the food processor to make creamy Banana soft serve. I love some “muffin top” type cookies that are soft and fluffy and like muffins and I’ve successfully made some of those that are really good with very minimal added fat. Unfortunately, your average cookie needs something more. So I went a little crazy with the picture taking for these. Peanut Butter and Banana Chocolate Chunk Cookies Recipe slightly adapted from Kitchen Karate Makes about 2 1/2 dozen small cookies 3 large ripe bananas1/2 C peanut butter3 tbsp coconut oil(or substitute any flavorless oil like canola)1 tsp vanilla1-2 tbsp maple syrup2 C old fashioned rolled oats(certified gluten-free if necessary)1/3 C shredded coconut1 tsp baking powder1/4 tsp cinnamon1/2 tsp salt1/2 C chocolate chipsup to 1/2 C other add ins(dried fruit, nuts, or more chocolate chips) Optional Preheat your oven to 350 degrees. Line a baking sheet with parchment paper and drop cookies by spoonfuls 1″ apart.
