Edinburgh Eats: Baking Sunday: Cinnamon Monkey Bread for Domestic Sluttery's Pudding Club Cinnamon is a very Christmassy spice, isn't it? Add it to mulled wine, spiced biscuits, chocolate cake and it gives an instant festive kick to things. I was considering this when I first heard the Domestic SlutsPudding Club theme for December was going to be cinnamon and had grand thoughts of festive baking. Cruft: Lasagna Cupcakes - StumbleUpon When Intelligentsia Coffee opened in Pasadena recently, I was intrigued the lasagna cupcakes they served. The cupcakes are made by Heirloom LA, a catering business. About the size of a muffin, a single lasagna cupcake was a delicious meal. After seeing how much my daughter enjoyed them (she ate my entire cupcake and I had to order a second one), I decided I had to try making them at home. After a bit of research, here is my method. The ingredients are fairly simple. Spray or wipe the cupcake tin with olive oil for prevent sticking and add a little flavor. Once you filled in the first layer, gently press another wrapper in, forming another cup. Once you've placed the second wrapper, repeat the filling as you see fit. A bit of Mozzarella cheese on top of it all. I baked them for 20 minutes at 375° F and then come out perfectly browned. If you remembered to use olive oil, they should slide out easily with top crispy and the wrapper moist and tender. The small cupcake size works well for us.

Pizza Swirl Bread | How Sweet It Is - StumbleUpon I have good news and bad news. The good news is… I made you bread. It tastes like pizza. It’s swirled with piles of grated provolone and spicy pepperoni and a nice little mixture of Italian seasoning [...that came out of a tube]. The bad news is that it disappeared. Like… all of it. At best I could dig the foil out of the trash for you that enveloped this loaf for a full 13 minutes before complete domination took over. See, bread if my favorite thing to make. I want to dive headfirst into this pepperoni roll on steroids and doggy paddle through every cheesy swirl. Pizza Swirl Bread [adapted from martha stewart.com] makes one loaf 4 tablespoons butter 1/3 cup milk 1/4 cup warm water 2 1/4 teaspoons active dry yeast 1 teaspoon sugar 1 large egg 2 1/4 cups all-purpose flour 1/2 teaspoon salt 2 garlic cloves, minced 6 ounces provolone cheese, freshly grated 4 ounces grated parmesan cheese 20-30 slices pepperoni, or however much you would like 1/3 cup tomato sauce, or more if desired 1. 2. 3. 4. 5. 6. 7.

Cut the crusts from a slice of bread and roll until very thin. When all of the rolls are made, bake for 15 to 20 minutes, or until they are just starting to turn golden brown and get a little crisp. If desired, drizzle with some icing made with powdered sugar that's been moistened with a little milk. These freeze really well. Souper Douper: Roast Tomato, Chilli and Cumin Soup I think we can all agree that it's officially soup weather. There is nothing nicer than curling up with a huge bowl of soup and half a loaf of crusty bread when it's cold outside. No less than half a loaf, mind - this season is all about the carb-loading too. I adore tomato soup but always resisted making it home because I hate the bits of tomato skin you get floating in it. 10 techniques every cook should know Breading This easy, three-step technique ensures an even crumb coating. It's commonly used on thin cuts of chicken, pork or veal that will be fried or baked. To begin, set up your breading station. Fill the first of three shallow dishes with flour. Start by dredging a piece of meat in the flour. The second step is to dip the meat into the egg wash, again letting the extra drip off. Try to work with one hand as you complete the process, so as not to bread your fingers on both hands - that can lead to a sticky mess. Proceed with the recipe as directed. Browning/Searing Myths abound about the benefits of searing, most notably that it seals in the juices. The most important factor in this technique is to start with a very hot pan. Although you can use nonstick pans for delicate fish, pans without a nonstick finish do a better job of browning, and leave lovely browned flavorful bits to use in a pan sauce (see "Making pan sauce.") Place your ingredient directly into the pan. Dicing an onion Folding

Bite-Sized Cherry &Strawberry "Pop Tarts" Sometimes it's the little things. Like being able to swing your legs out of bed and slide your feet into fuzzy slippers to shield you from the chill on the floor. Like shuffling half-asleep and blurry-eyed into the kitchen and having the sweet scent of freshly brewed coffee to welcome you. Like pouring that first cup of elixir, stirring in a splosh of milk and sandy sprinkling of brown sugar and then lifting it waiting lips and drinking in your first sip of morning magic. Let me go back a few months. What's my point? Speaking of little things... Bite-Sized "PopTarts" I made a double batch and did half cherry and half strawberry filling. yield: ~24 bite-sized "poptarts" filling: 1 c. fresh cherries, pitted and diced (or strawberries, diced) 3 Tbs. sugar 2 Tbs. cornstarch 2 Tbs. water ½ tsp. almond extract (or vanilla extract if using strawberries) crust: 1 double pie crust, homemade or store-bought (the rolled, doughy kind) glaze: 1 c. powdered sugar 1-2 Tbs. milk 1/2 tsp. vanilla
