This is my sixth month participating in the Improv Cooking Challenge which is hosted by Kristen of Frugal Antics of a Harried Homemaker. As always I looked forward to participating and finding or coming up with a great recipe which included the two theme ingredients. This month the participating bloggers were asked to make any recipe of their choosing using the two given ingredients of potatoes & cheese. I knew immediately what I was going to make as this recipe has been a favorite in our home for a few years and as I haven’t made it in ages nor have I ever posted the recipe to my blog, well it was time to make it. NOTE: A reduced fat & lower calorie version can be found here: Slimmed Down Loaded Potato & Buffalo Chicken Casserole In a large bowl mix together the olive oil, hot sauce, salt, pepper, garlic powder & paprika. Add the potatoes and stir to coat. Add the potatoes to a greased baking dish. Once the potatoes are fully cooked add the marinated chicken. Topping: 2 c. Enjoy!

Homemade Chicken and Dumplings Homemade chicken and dumplings. Or, chicken n’ dumplins’ rather, as we like to say in the South. I had been eagerly searching for a recipe like the kind I enjoyed so much growing up and this one, from TIffany (TK member Eat at Home), nailed it. There are many different versions of chicken and dumplings and this is definitely the one that reminds me of home. For this version, the dumplings are rolled out thin and sliced, rather than dropped biscuit-style into the bubbling chicken stock. The result is a creamy, thick chicken stew that is just perfect for chilly nights! Another reason I love this dish so much? To make the dumplings, in a large bowl measure out 2 cups of flour … A half teaspoon of baking powder … And some butter! Then add a little less than a cup of milk and a pinch of salt. Mix the dough together and then roll out on a heavily floured surface. Once you have the dough rolled out, make long slices either using a pizza cutter, a pastry cutter or just a plain ol’ knife.

My Kitchen Escapades: Parmesan Chicken Bake Visiting family is such a bitter sweet experience for me. It is so amazing to spend time with those I love most, but I suffer from such depression after it is over. After two weeks visiting my parents in Ohio, we are headed back home to Minnesota. It will be tough on me, but it is so heartbreaking to see how tough it is on my kids. John Wayne Casserole Soooo, yeah. The only reason I made this recipe was because it's called 'John Wayne Casserole'. That's it. My husband loves John Wayne. I had no idea what to expect with this. I'm posting the recipe as I found it originally, but for my little family of three, I cut it in half and made it in an 8x8 baking dish (I usually cut 9x13 dishes in half the first time I make them just in case it sucks, then I don't have to throw out a large amount of food). Mexican Dorito Casserole I'm not even gonna pretend that this anything but what I call "Trash Food." Every once in a while trash food is the best kind of food, comforting and totally delicious. Mexican Dorito Casserole Serves about 6 Ingredients 2 c. shredded cooked chicken1 c. shredded cheese (or more if you are a cheese hound)1 can cream of chicken soup1/2 cup milk1/2 cup sour cream1 can Ro-tel tomatoes (canned tomatoes with jalepenos-mild)1/2 packet taco seasoning (or more- to taste)Bag of doritos DirectionsPre-heat oven to 350-f degrees.In a mixing bowl, combine all ingredients except doritos.In a greased 2 qt baking dish, put a layer of crushed doritos (about 2 cups), then a layer of the chicken mixture. Taco Bake One food item I always seem to have in my pantry or in my fridge are flour tortillas. They are good for so many things. Tortillas can be made into so many different types of snacks for kids (and grownups). Ingredients: 1 pound ground beef 1 packet taco seasoning * water as called for on back of seasoning packet 3 large flour tortillas (8-inch size) 1/2 cup Salsa Con Queso 1 1/2-2 cups shredded Mexican cheese blend Directions: Brown and crumble ground beef. Add in taco seasoning and water (following directions on back of seasoning packet). Once the taco meat is ready, turn off heat and add in 1/2 cup salsa con queso. I like a mild salsa con queso. Give it a good stir, until thoroughly combined.It don't look all that pretty, but don't worry, we're gonna dress her up a bit. Preheat oven to 350F degrees. Spray an 8-inch round baking pan with nonstick cooking spray. Layer the bottom of the pan with a flour tortilla. Now add about 1/3 of the ground beef taco filling on the the first layer.
