Just you, your stove and a bit of batter and you’ll have a plate full of thin pancakes in no time at all. I’ve always wanted to live abroad, even if just for a short time. Fluffy Pancakes This pancake recipe is the result of mixing and matching different recipes from many different sources. It is the result of trying and failing so many times, that I almost declared pancakes as the one breakfast recipe I couldn’t master. But I persisted, and this recipe is perfect – as perfect as a pancakes recipe can be, because making pancakes does involve frying, and frying is something that each of us needs to play with. It changes depending on your type of stove (gas or electric), on how hot the skillet is, and on how evenly hot you manage to keep it while frying multiple batches. Red Velvet Crepes (Makes about 24, 8″ crepes) Ingredients: – 1 1/2 cups all-purpose flour - 1 teaspoon baking powder - 1/2 teaspoon baking soda - 1/4 teaspoon salt - 3 tablespoons sugar - 2 cups butter milk - 1 1/4 cup whole or lowfat milk - 1 large egg - 1 teaspoon vanilla extract - 1 1/2 tablespoons cocoa powder, sifted - 1 tablespoon red food color gel - 2 tablespoons unsalted butter, melted + 2 tablespoons cooking oil (for pan) *Update: Because the buttermilk lends to the acidity of this batter, do not substitute the baking soda for extra baking powder. Usually I’ll admire something and bookmark it, maybe getting inspired by another beautiful recipe along the way. You basically start with a classic pancake, (this recipe below or your own,) and swirl in a cinnamon, brown sugar, butter mixture. I highly recommend you makes these happen in your life very soon. Ingredients 1 cup all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup buttermilk 1 Tablespoon canola oil 1 large egg, lightly beaten Cinnamon Filling: 1/2 cup butter, melted 3/4 cup brown sugar, packed 1 Tablespoon ground cinnamon Glaze: 4 Tablespoons butter 2 ounces cream cheese 3/4 cup powdered sugar 1/2 teaspoon vanilla extract Instructions Prepare pancake batter: In a medium bowl, whisk together flour, baking powder and salt. Perfect Pancakes and Strawberry Butter In my opinion, pancakes are the most perfect of breakfast foods. However, not all pancakes are created equal and I’ve been on a lifelong quest to find the perfect pancake recipe. My ideal pancake is thick and cakey, yet still maintaining a light fluffiness. My friends, I think my quest is over. I started with Ian’s dad’s traditional Saturday morning recipe and adjusted the baking powder, salt, and egg ratios until somehow I stumbled onto this combination that makes a great thick batter that puffs up into beautiful fluffy pancakes. Perfect Pancakes Makes about 8 medium sized pancakes, enough for about 2-3 people with good appetites 1 1/2 cup flour 2 Tbsp sugar 4 tsp baking powder 3/4 tsp salt 2 eggs 1 1/3 cup milk, at room temperature 1 Tbsp butter, melted 1 tsp vanilla In a medium mixing bowl, combine the dry ingredients and set aside. Cinnamon Toast Rolls The USDA released its new food pyramid the other day (which is actually a plate now instead of a pyramid), and I am sorely disappointed to report that cinnamon rolls did not appear anywhere on that plate.
