Who’s got the munchies? Ha! Seeing as our Cup of Coffee Cake (in Under 5 Minutes) was our most popular post of 2011, I thought y’all might enjoy my other favorite last minute snack, which is even quicker and easier and more fattening (and therefore more delicious/more embarrassing to admit I eat on a regular basis). It’s french toast in a cup, made in your microwave and topped off with a generous ssquirt of ssyrup (which is making my ssssss key kind of sssticky right now). Cube your bread. Get your cup or cups ready. Place the bread in the cup of your choosing. Mix it all together with a fork. Pour the mixture into your cup/cups. Add syrup. Eat.

Banana Mug Cake Friday, June 29, 2012 Banana Mug Cake I love banana bread, but when I develop a craving for it, it takes a while to satisfy. I have to mash some bananas, bake for an hour, let it cool, etc. But not anymore. Banana cake is possible in just a few minutes. Someone requested I try making this cake, but I didn’t get a chance to try creating it until now, after being given some lovely organic bananas from Organics Unlimited . When I added egg yolk to the batter, it turned the cake quite yellow. I even lightened the cake a little by replacing by eliminating the oil with some nonfat yogurt and nonfat milk. Like all the other mug cakes I’ve made, this one was easy to make. A little more information about the bananas.

Red Velvet Mug Cake Monday, March 19, 2012 I’m not sure where the inspiration came for making this mug cake this week. It wasn’t a suggestion by a reader, it wasn’t some idea that popped into my head that I had jotted down. It just sort of magically appeared into my thoughts while I was in the kitchen. I’m pretty picky when it comes to red velvet cakes. And even though I don’t really enjoy cream cheese frosting, I made it just for this cake. I was really proud at myself for opening the red food coloring bottle without staining my hands. Here’s the list of the rest of my mug cakes I’ve made so far. Red Velvet mug cake Ingredients: For the cake: 4 tbsp flour 4 1/2 tbsp sugar 1/8 tsp baking powder 1 1/2 tbsp unsweetened cocoa powder 3 tbsp oil 3 tbsp buttermilk 1 egg 1/2 tsp red food coloring For the frosting: 2 tbsp cream cheese 2 tbsp butter 1/2 cup sugar Directions: Mix all the ingredients together into an oversized mug using a fork or small whisk until batter is smooth. Let cake cool slightly before piping frosting.

Cake Batter Bites | a recipe So, as I was getting my daily fix of Pinterest (yesterday), I came across these bad boys! WHAT?! I had to make them. And I did. Turns out, they ARE just as yummy as they look!!! They were super easy, and fast. Here’s the recipe by The Girl Who Ate Everything (She’s got some great recipes!) Cake Batter Bites: 1 ½ cups flour 1 cup yellow cake mix ½ cup unsalted butter, softened ½ cup white sugar 1 teaspoon vanilla 1/8 teaspoon salt 3-4 Tablespoons milk 2 Tablespoons sprinkles Truffle Coating: 16 ounces (8 squares) almond bark (or white candy melts) 4 Tablespoons yellow cake mix sprinkles  Beat together butter and sugar using an electric mixer until combined.
