Who’s got the munchies? Ha! Seeing as our Cup of Coffee Cake (in Under 5 Minutes) was our most popular post of 2011, I thought y’all might enjoy my other favorite last minute snack, which is even quicker and easier and more fattening (and therefore more delicious/more embarrassing to admit I eat on a regular basis). It’s french toast in a cup, made in your microwave and topped off with a generous ssquirt of ssyrup (which is making my ssssss key kind of sssticky right now). 'Baked' Oatmeal in a Mug I recently posted about Chocolate Cake in a Mug, where I showed you how to bake a single-serving chocolate cake in only a few minutes. That got me to thinking, would this work for baked oatmeal too? I adore baked oatmeal, but most mornings I don’t have the time to bake it. So I tried applying the principles of chocolate cake in a mug to baked oatmeal, and it actually worked pretty well! I still think oven baked oatmeal is the best, but when you’re in a hurry, this microwave version hits the spot. 5 Minute Chocolate Fudge S'mores Mug Cake Oh hi! Just sharing a s’mores mug cake today. That can be made in 5 minutes. You know… NO BIG DEAL. Since you’re asking, yes… I have always thought the whole “cake in a mug in a microwave” thing was sort of skeevy. But no fear. All you have to do is throw some stuff in a mug and eat it. And it may not even really be a pie, but what the heck else should I call it? Combine the ricotta cheese, buttermilk, sugar, melted butter, and vanilla in food processor and process until smooth, about 10 seconds. Add the flour, baking powder, salt, and baking soda and pulse in short bursts just until the dough clumps together (don’t overprocess). The dough will be soft and moist. Dump the dough out onto a lightly floured surface and knead it with floured hands 4 or 5 times until smooth (it really only takes 4-5 times). Brush the dough with the melted butter, leaving a 1/2-inch border unbuttered around the edges. Starting at a long edge, roll up the dough jelly-roll style. With a sharp knife, cut the roll into equal pieces (I got 8). Bake until golden brown and firm to the touch, 20 to 28 minutes. Strawberry Lemonade Vodka A couple weeks ago I posted a Strawberry Basil Mojito and it started me on a beverage kick. I wish I hadn’t waited until the end of summer to start thinking about creative, fruity and refreshing drinks, but being the procrastinator that I am, I did! Sweet drinks are tasty, and they’re a simple way to liven up a party. A random Friday night with friends and a deck of cards is fun for sure… but add in a sweet vodka drink and SNAP! I especially love this drink because it combines 2 of my favorite flavors: lemon and strawberry with my favorite alcohol: vodka. I made a pitcher of Strawberry Lemonade Vodka mere days after the mojito so I had leftover simple syrup. Use a food processor to puree a pint of fresh strawberries and water Pour it into a pitcher with ice Pour in the lemon juice Plus the water and simple syrup And vodka :-) Perfectly tart and sweet! In a medium-large bowl, sift together all dry ingredients. For the topping, mix sugar and cinnamon in a small bowl.

Nutella Cheesecake Bars The day we made these Nutella Cheesecake Bars did not start out so smooth. Our initial plan was to make Churro Cupcakes, which Kara and I had both been eyeing for months. The cupcakes had lots of steps, which we usually try to avoid, but we made them anyway. We had high expectations and they were a complete and utter flop. In fact we disliked them so much that we immediately tossed them, deciding to not even bother with the frosting. I am so glad that we decided on this recipe because they were delicious!
