$50 Weekly Menus

$50 Weekly Menus
Each week we'll share our weekly menus as well as recipes for our family of 4, which includes two seemingly ravenous teenagers (& several of their buddies) and two adults. I mention that we include the kids' friends in our menu because it's become a habit for them to have friends over several times per week. For the past 15 years, we've spent, on average, less than $250 per month for groceries (& household items- cleaners, detergents). Regarding Coupons: On occasion we DO use coupons; with that said, our weekly menus are NOT based on coupon use. It requires you to go to several different stores several times per week in order to find and take advantage of the best deals. Related:  Meals

Secret Ingredient, Better Than Takeout! Beef and Broccoli Beef and Broccoli that is literally better than any Chinese takeout and easier than you might think! Beef and Broccoli is the epitome of Chinese food in my book. It just doesn’t get better than tender slices of beef that are SO juicy, SO flavorful as they soak up the marinade and then slathered in savory soy, ginger, garlic sauce. I was at an awesome restaurant a few days after I had made this Beef and Broccoli recipe and I was still craving it. So even though I had just eaten beef broccoli, I giddily ordered it off the menu. Caprese Panini with Tomato, Pesto & Mozzarella This sandwich is seriously delicious. Not even going to sugar coat it or build it up, it is to.die.for. Make this for lunch, make it for dinner. Don’t wait, do it now. I was picking up my usual at Costco last week: quinoa, lettuce, and some pictures I had ordered, and while making my way back to the produce section, I passed by a ‘bread roadshow’. Driving home I brainstormed what I could do with this bread…garlic bread? So I went home and made some pesto (just throw basil, Parmesan cheese, pine nuts, lemon juice, salt & pepper, and olive oil into a Food Processor …if you want extra creamy pesto, you could add a little mayo or Greek yogurt to the mix, I didn’t.), sliced up the tomatoes and let them sit in some balsamic vinegar, and then put the sandwiches together (scroll down for full recipe). Of course if you don’t have a Costco near you, you could use any sort of crusty loaf bread from your grocery store’s bakery. Caprese Panini with Tomato, Pesto & Mozzarella Ingredients Instructions

Crockpot Teriyaki Chicken - Supper for a Steal I must be on a Asian takeout kick, I feel like this is the 30th recipe I have posted that is a make at home take on Asian food. But really I never tire of them. If you keep a few key ingredients on hand you can make these types of meals in a flash, well a flash after letting it cook in the crockpot all day. I used to purchase those frozen kits for easy Asian food at home, but not anymore. I don’t even want to see the ingredient lists on one of those anymore. You could substitute boneless chicken thighs if you are more of a dark meat fan, but usually I can only get away with using dark meat in casseroles. Serve the chicken over rice, you don’t want any of that delicious, sticky sauce going to waste. Crockpot Teriyaki Chicken Cook time Total time Recipe type: Main Serves: 4-6 Ingredients 2 lbs boneless chicken breasts ½ cup sugar ½ cup soy sauce 3 tablespoons cider vinegar ½ teaspoon ground ginger 1 clove minced garlic ⅛ teaspoon pepper 2 teaspoons cornstarch 2 teaspoons water Instructions
