Chess Squares When I was in New York a few weeks ago we stopped by one of the most unique bakeries I’ve ever visited, Momofuku Milk Bar. Noted for their unusual concoctions like cookies made with potato chips, birthday cake truffles, and cereal milk ice cream, I’d been wanting to visit Momofuku’s and try a slice of their famous Crack Pie since I came across the recipe in the LA Times last year. The thought did cross my mind that I could actually, you know, make the recipe myself, but one thing kept stopping me. It’s decidedly fussy. With 22 ingredients (including 8 egg yolks, ugh) and the advertised one-and-a-half hours of labor-intensive preparation, I just kept putting the whole thing off. When I did finally get the chance to taste it two weeks ago, I immediately flashed back to my college days when my girlfriends and I would flounce around in the kitchen, throwing dinner parties for our boyfriends, and making sinfully sweet treats for church Bible studies. Oh right. Gooey Butter Cake. Doh. Doh.

Pots and Pins: Salted Caramel Rice Krispies Treats... Once a year, whether I like it or not, I watch a few dozen laps of the Daytona 500. The mister makes sure of it. If you've never seen a 500 mile race, this is how it goes: Driver gets in car, pushes gas pedal, turns left over and over and over, and either wrecks or crosses finish line. This year the Daytona, cancelled due to rain, was moved from Sunday to Monday, all fine and good except that by 8:00 P.M. Fortunately, I had these little beauties to help ease my pain...and wouldn't you know it, right before the race ended, my sugar coma began. The sprinkle of salt on top of the caramel is just enough to make your taste buds stand up and take notice...and just enough to cut the sweetness long enough for you to take another bite or four. We live in uncertain times with a troubled economy, and it can be easy to worry about what the future holds. That uncertainty is a big reason my family has an extra storage of food supplies at home. Stocking up months worth of basic food items might sound strange/fanatical to some, but it gives me peace of mind to know that if something bad ever happened and if, for whatever reason, it became difficult to obtain food, we'd be okay... or if we lost our income... or, if something happened to our friends or neighbors we'd be able to help them out. We store things like wheat (that I grind into flour at home), oats, dried beans, dried pasta, jarred pasta sauce, peanut butter, boxed cereal, canned fruits/veggies, extra baking supplies, etc. The other day I was looking for new ways to use oats (besides cookies, oatmeal, and breads). Well, because those bars are more like candy bars.
Chocolate Chip Cookie and Caramel-Peanut Butter Bars « thebitesizedbaker The other day, I drank a homemade Vanilla Latte a little too late at night and I was up tossing and turning until 2AM with one thing on my mind, layered cookie bars. #Riskyfat. For my own self respect and waist line, I waited until the following day to bake my masterpiece. Two-Ingredient Lemon Bars This simple, two-ingredient lemon bar is a nostalgic recipe for me. A friends mother had made these lemon bars for a birthday party, and my mom asked for the recipe. I remember my mom telling me that it was easy enough for me to make - it was one of the first recipes I remember making mostly on my own. While I don't expect, you to get all nostalgic putting together this easy recipe, it is one of the easiest bar recipes I have ever found. Mix them together by hand until moist. Tonight I actually tried one with some left over fruit salsa from Our Best Bites, and it was amazingly delicious.

Brownie-In-A-Mug Mix | The Frugal Farm Wife I wish I could remember where I found this recipe so I could credit it, but I lost it. I guess that’s the downfall of having a recipe that’s so easy to remember. 1/4 cup flour, 1/4 cup brown sugar, 2T. each of cocoa, oil, and milk. Mix together and zap it for a minute. This is not a good recipe to have bouncing around in a chocolate addict’s brain. It eventually occurred to me that it would be really handy to mix the dry ingredients together to have on hand in case someone should pop in for a visit. Yes, I’m sure that was my only motivation. I mixed mine up in a canister which sits on the kitchen cupboard. Brownie-In-A-Mug Mix 2 cups flour (I used a gluten-free flour mix) 2 cups brown sugar (or raw sugar) 1 cup cocoa (more or less depending on how dark you like your brownies) Mix together well and store in an air tight container. To make a brownie: Mix together 2T. oil and 2T milk, water, or coffee with 1/2 cup of brownie mix in a mug or small dish. P.S.
