Chocolate Chip Cookie Dough. Is there anything better? Well, actual chocolate chip cookies would rank right up there I suppose. But really, how many times have we all eaten raw cookie dough before shoving those babies in the oven to bake? Well, worry no longer because Lindsay of Love and Olive Oil has just written her first book, The Cookie Dough Lover’s Cookbook, filled with recipes using eggless raw cookie dough in cakes, pies, brownies, ice cream and more. So this weekend I tried the basic Chocolate Chip Cookie Dough Truffles recipe from her book. All you need is flour, sugar, brown sugar, salt, butter, milk, vanilla and chocolate chips. No egg and all safe to eat by the spoonful. Or you can make truffles. I got more than 30 from the recipe but I can’t say exactly how many because, well I may have eaten some first. After you scoop them, roll them into round balls like the third one up from the bottom right. Then freeze them so they’ll be firm enough to dip. Can you see where I’m going?

Chocolate Banana Bites I have an issue. An issue which you already know about. I need something sweet every single day. Ok, maybe I don’t need it, but like the shoeboxes that have taken over my closet, I want it. And truth be told – I want something sweet every minute. I would be perfectly content eating dessert for breakfast, lunch and dinner, along with a nice serving of salt ‘n vinegar chips to give me that salty fix. But my clothes won’t be content with me spilling out of them. And Mr. So in come my little banana bites. I first had a chocolate-covered banana at some kind of redneck fair years ago. I’m talkin’ like . . . more than 15 years ago. When a banana is coated in chocolate, there just isn’t enough chocolate for me. I also have super sensitive teeth. So, these mini frozen banana bites fit the bill perfectly. Check out how incredible the look! In my opinion, they are also a guilt-free treat. Unfortunately, I never feel guilt when it comes to food. Taking down an entire tray of these does much less damage.

Caramel Apple Bites Caramel apples are an absolute classic snack of the autumn season! I love how you can decorate them with sprinkles, nuts, candies or just a drizzle of chocolate to go with whatever tastes you prefer. I thought it would be fun to try and make a mini version! I thought these would be a fun appetizer at a party or get together. Mini Caramel Apples makes 2 dozen. Needed: 1 package of caramel apple wrap , 2 Granny Smith (or other variety) apples, 1 cup melted dark chocolate, nuts or other garnishes you prefer (optional). and toothpicks. Use a knife to prep your caramel sheets by cutting them into small squares. Have fun making these mini caramel apples! Gravity of Motion: Mocha Chip (Nut Free) Biscotti I love coffee (big surprise, right?) and I really enjoy biscotti. Have you ever tried to find a nut-free biscotti? Mocha Chip (Nut Free) Biscotti 2 cups all-purpose flour1 teaspoon baking powder6 tablespoons butter (or margarine), softened3/4 cup sugar2 eggs1 teaspoon vanilla1 tablespoon instant coffee granules1/2 cup miniature semi-sweet chocolate chips Preheat oven to 350 degrees. Form each half into a 7 by 2 inch log. Bake 30 minutes. Carefully remove logs to cutting board. Arrange slices upright in pan, about 1 inch apart. To drizzle with chocolate, microwave 1/3 cup miniature semi-sweet chocolate chipes and 2 tablespoons butter or margarine on high 1 minute; stir. Cake Batter Truffles Spring is here, or at least it’s kind of here. I’m still waiting for Mother Nature to get the memo. Easter is also right around the corner and my kids are counting down the days for the Easter Bunny! I couldn’t wait to try this recipe I created, so Easter came a little early in the treat department at our house! What Easter Bunny wouldn’t love these cute little Cake Batter Truffles?! No baking, and less than 10 ingredients! But before I get to more about the recipe, I have an announcement. Ok, back to the recipe….I’ve been running across a lot of different truffle recipes lately. The dough doesn’t take many ingredients and comes together quite easily. In the meantime melt some of your favorite chocolate or candy melts. Once the chocolate/melts are smooth, get ready to dip. Let the chocolate run off the truffles for a few seconds then place the truffle back on the lined baking sheets. After you dip the truffles place them back in the fridge for a few minutes for the chocolate to set.

But it still has its limitations. I found the solution to this crisis — are you allowed to call the irregular appearance of homemade chocolate babka in your life a crisis?
