Peanut Butter Crunch Shortbread Recipe These little five-ingredient Peanut Butter Crunch Shortbread elephants marched their way into my kitchen the other day. Even though they’re made with peanut butter (get it – elephants? peanuts? ha ha), the crunch doesn’t actually come from peanuts. Even better: it’s turbinado sugar. Until now, I’d only ever used turbinado sugar – the kind with the large golden crystals – on two types of occasions: to stir into coffee when “regular” sugar wasn’t available or to sprinkle on top of muffins. It’s gotten me thinking about other baking situations where you might want an extra sugar crunch inside your dough or batter…like maybe pie crusts? Strawberry & Chocolate Nachos I’ve said it once and I’ll say it again: sometimes the best creations are the ones you don’t set out to create! This might be my new favorite thing. It’s the perfect easy, throw-together, family style dessert for summer. I did a local tv segment this week and made my Baked Cinnamon Chips and Fruit Salsa. Then my boys walked in from the back yard with handfuls of strawberries from our garden and I started thinking about how chocolate covered strawberries sounded so good right then because my first thought when I see any sort of food product is how it would taste covered in chocolate. So I chopped up those berries and let them sit in a spoonful of sugar for a bit. Then I sprinkled them all over those crispy cinnamon-sugar coated chips. I grabbed some chocolate chips, and ate a few. Adding just a touch of vegetable oil or shortening to your chocolate makes it nice and smooth for drizzling. When it’s nice and melted, you can start drizzling. in an artistic-meets-haphazard sort of way

I thought the whole concept of food in a jar deserved a post all of it’s own. Chocolate Chip Lava Cookies I am so in love with these darn chocolate lava cookies! What is it about a warm, gooey chocolate chip cookie stuffed with decadent, rich, melted chocolate that makes it so irresistible?? Especially when topped with vanilla ice cream. These are one of Kev’s favorite homemade treats, and he usually asks me to make them at least once a week. All you really need for these fabulous cookies is your favorite cookie dough and a bag of chocolate chips. Since these cookies are absolutely gushing with delicious rich chocolate, my favorite chocolate chips for this recipe are the Hersey’s Milk Chocolate chips. Now let’s make some chocolate lava cookies! Place the flattened cookie dough in the bottom of a well-greased standard sized muffin tin. Now for our gooey, rich milk chocolate filling. Lay the Ziploc bag flat in the microwave, spreading out the chocolate chips in a single layer. Cut a small tip off the Ziploc bag and layer over the cookies. Heaven help me. Ingredients (a guideline) 1 hard crusted Italian bread 3 rib eye steaks 500g mushrooms 1 onion 8 rashers of unsmoked back bacon Swiss Cheese slices Worchester Sauce, Dijon Mustard, horseradish or condiments of your choosing. How to Make Margarita Cupcakes Cinco de Mayo will soon be here (May 5th for those non-Spanish speakers). Though it’s a Mexican holiday, here in Southern California, Cinco de Mayo celebrations are pretty widespread… mostly an excuse to eat Mexican food and partake in downing a few margaritas. We had a party last year for that very reason. These Margarita Cupcakes are fun for a Cinco de Mayo party, but they surely can be made for any festive, adult occasion…emphasis on adult. They do have a bit of tequila in them, so it’s probably best to keep them away from the little ones. Also in these cupcakes is margarita mix and Grand Marnier. These are simple cupcakes that begin with a box of white cake mix. The icing is a Lime Buttercream. I thought this might be a fun way to serve them too, but then things might get kind of, um, interesting when you have your guests licking the bottoms of the shot glasses. Have fun with these… They were a big hit with my taste testers!

I decided to get brave and use the boneless skinless chicken thighs, and I wasn’t disappointed. I like it with Tzatziki on top (my recipe is in this post), or a little “fry sauce” (what some drive-ins call that wonderful mayo/ketchup combo), and with a thick slice of tomato, avocado, onion and lettuce, as a burger should be, it’s fab.
