Ever have one of those "Ah-ha!" moments? I happened to me yesterday when I was lamenting the price of those very convenient Betty Crocker Cookie Mixes. I remember when they used to only cost $1.00 each in Walmart and now they're $2.50 each! Who says there's no inflation? Anyway, I usually just tell myself that I can make cookies from scratch anytime with the plentiful ingredients of my pantry, but then it came to me...Why can't I make cookie pre-mixes and keep them in ziplock bags for use at my convenience? So, I've come up with recipes for four of my family's favorite Betty Crocker Cookie Mixes. Fake Betty Crocker Chocolate Chip Cookies: 1 Cup Flour 1/4 Cup White Sugar 1/2 Cup Brown Sugar 1/2 teaspoon Baking Soda 1/2 teaspoon Salt 3/4 Cup Chocolate Chips Mix together and store in a quart size ziplock bag. I grabbed a muffin tin and wound up making sort of a modified muffin version of monkey bread—and everyone loved them. I put half a pat of butter (so, 1/2 teaspoon) into muffin tins. Then I put a little under a teaspoon of sugar into each tin. Did you read what I wrote? Next, I dumped in 1/4 teaspoon ground cinnamon. Then I grabbed the leftover dough (it was cold in the fridge) and rolled three small (walnut-size) balls of dough. And a little more cinnamon… Yikes.

Banana Pudding Poke Cake If you follow this blog at all, you'll know all about my adoration for poke cakes. So far I've got: As you can see, I love me some poke cakes. And now I'm adding another to the list. The inspiration for this next poke cake actually started out at work. I was talking to my good buddy Amanda. This is made without slices of bananas, however, you could certainly add those on there if you like. Ingredients:1 box yellow cake mixingredients needed to make cake (eggs, oil & water)2 (3.4 oz.) packages instant banana pudding4 cups milk1 (8 oz.) tub frozen whipped topping, thawed20 vanilla wafers, crushed Directions:Prepare cake mix according to package directions for a 9x13 cake.Once cake comes out of the oven, allow it to cool for just a couple of minutes.Then, with a wooden spoon handle or some other similarly-sized object, begin poking holes in the cake. You want the holes to be fairly big so that the pudding has plenty of room to get down in there. Pour pudding over cake. Enjoy!

The Best Pot Roast....EVER! I live in a small town. Like really small. But I LOVE it! There are so many reasons why I love it... I could list them all for you, but I won't. But I am going to give you one of my favorite reasons. My local grocery store. Its called Barretts. I LOVE that they know me... We were looking to make a Roast for Sunday Dinner, We were standing at the meat counter, trying to decided what to get. Dave, the best meat counter guy, told us about this recipe. And it is SO GOOD, SO EASY, and SO TENDER!! You'll need: McCormicks slower cooker Savory Pot Roast season packet An Au Jus packet A Can of Pepsi (we use Coke because we always have coke in our house) And Boneless Cross Rib Roast and your crock pot Put your Roast in the crock pot. Mix the Slow cooker seasoning with 1 cup of Water. Pour on top of roast. Add the whole can of Coke. Cover with your lid for 8 Low or 4 hours on high. Its VERY important that you never lift the lid! Right before you are ready to pull it out, sprinkle your dry Au Jus packet over the roast.

Crockpot Chocolate Lava Cake Well here it is my friends. The wonderful cake I was telling you about, that was baking in my CROCKPOT! I know there are many, many awesome things you can do in a crockpot, but I seriously had never heard of baking cakes in them! I was over at Tasty Kitchen checkin out all the great recipes, when I came across this cake. I was so intrigued. A cake to be made in a crockpot sounded genius and amazing to me! It turned out simply AMAZING. 2 cups Brown Sugar2 cups All-purpose Flour6 Tablespoons Unsweetened Cocoa Powder4 teaspoons Baking Powder1 teaspoon Salt1 cup Milk4 Tablespoons Butter, melted1 teaspoon Vanilla Extract 1 1/2 cups Brown Sugar1/2 cup Unsweetened Cocoa Powder3 cups Boiling Water Directions: For the cake: Mix together the sugar, flour, cocoa, baking powder and salt in a large bowl. For the fudge topping: Mix together the brown sugar and cocoa. Pour the boiling water over the top. Cake will be very hot!
