Moroccan Chicken with Preserved Lemon and Olives - Stove Top Method Chicken with Preserved Lemons and Olives is a classic Moroccan dish. Salty, lemony and zesty, it’s one of my personal favorites. Saffron is optional, but a delicious, fragrant addition. This recipe is for conventional stove top preparation in a Dutch oven or heavy-bottomed pot. This dish can also be made by cooking in a traditional tagine or slow-roasting in the oven. Prep Time: 15 minutes Cook Time: 1 hour, 30 minutes Total Time: 1 hour, 45 minutes Yield: Serves 4 Ingredients: Preparation: Cook the Chicken Mix everything except half of the saffron, olives, and lemon in a heavy-bottomed pot or Dutch oven. When the chicken is cooked, transfer it to a plate and cover. Reduce the Sauce Continue cooking the onion mixture and sauce over medium-low heat, stirring occasionally, until the liquids evaporate and the onions form a blended mass which separates from the oils. Add the preserved lemon, olives, the rest of the saffron, and a few tablespoons of water, and simmer gently for 5 to 10 minutes.

I loved watching all the adults in their fancy clothes eating lavish hors d’oeuvres and having fun! To this day I think of New Year’s Eve as a night for elegance and sophistication, even if we’re just planning a quiet night at home to watching the Times Square ball drop on television. To me, nothing says elegance and sophistication like caviar, especially on New Year’s Eve. Don’t you agree? Smoked Salmon and Cucumber Rolls with Caviar Yields Approximately 12 rounds Ingredients: 1 English cucumber, thinly sliced lengthwise (preferably sliced with a mandolin) or cut into 1/4-inch rounds 2 ounces smoked salmon, or more as needed, cut into 12 pieces Crème fraiche, or more as needed 1 ounce any variety of caviar or fish roe (I used salmon roe and paddlefish caviar). . . Italian Grilled Cheese Who doesn’t love a good grilled cheese? And, I know it’s totally Ameeeerican to make the classic: American cheese, mayonnaise and bread. But, why not change it a bit and use REALLY fresh and natural ingredients?!?!? Love it! There’s nothing more delicious than fresh and homemade ingredients. Soooo, go to your farmers market and get the freshest tomatoes and basil you can find, grab some mozzarella balls, and assemble this amazing meal. Basil & Oregano Pesto Ingredients 1 cup fresh basil leaves1/4 cup fresh oregano leaves (or just more basil leaves)1 garlic clove1/4 cup of walnuts1/8 teaspoon salt1/4 teaspoon pepper2-3 tablespoons olive oil How-To Put all of the ingredients in a food processor, blend and set aside. Basil & oregano pestoMozzarella cheese, slicedTomato, slice. Put your griddle (or panini press) on medium heat.Spray with cooking spray.Assemble your sandwiches.Cook until lightly browned and the cheese has melted.Cut in half and serve right away. Willow Bird Baking Parmesan Garlic Bread: Last week was a busy week filled with a field trip to the zoo sandwiched by 3 twelve hour shifts. By Friday I was extremely happy for the weekend to arrive. Although Pat worked late, we still barbecued dinner and relaxed with a few adult beverages after tucking in our girls. Tonight he made a special request… for garlic bread. Here are the ingredients you will need. Start by pressing the three cloves of garlic into a medium bowl. Mince up a shallot so it measures one tablespoon. Add the shallot to the garlic in the medium bowl. Next, mince up the fresh parsley and measure out a tablespoon. Add that to the bowl along with the salt and pepper. Now add the *gasp* two sticks of butter and the two tablespoons {give or take} of freshly grated Parmesan cheese. Mix until combined. And set aside, just for now. Grab your loaf of Italian bread. Using a bread knife, slice lengthwise in half and place on a sheet pan. Remove and slice immediately. Ingredients: 1 loaf of Italian Bread 1 tablespoon Shallots, minced

Those nights meant freedom to my sister and me, too: babysitters! The Love Boat! Fantasy Island! Oh my, how we looked forward to watching Charo charm Captain Stubing and his merry crew, sharing a bowl of hot buttery popcorn balanced between our nubby, bandaged knees. I wanted to recreate the sheer joy, if not the actual taste, of that childhood meal, with a crust that could be drenched in gravy and still retain a crunch, vegetables that stood on their own but melded well together, and chicken that added a savory layer of its own.
