First of all, I promise this isn’t turning into a food blog But, I asked on facebook what you all would like me to post next, and sharing my first attempt at freezer cooking won the vote! If you want more freezer meal ideas, follow me on facebook now! So, yesterday I achieved my first ever attempt at “freezer cooking”. Stephanie, one of my favorite bloggers over at Mama and Baby Love did a post about it months ago, and I’ve wanted to do it ever since, but just haven’t taken the time. I wish I would’ve done it a lot sooner, because I found that in “not taken the time” I was actually wasting a lot of time! I was pretty happy with my results! And my favorite thing, I can control all of the ingredients to make them as healthy as I want. So here is what I did…1) I made a list of my recipes. Farmers’ Market Recipe Collection: Grilled Garden Wrap It appears I have a wee problem on my hands. No, wait, that didn’t come out right. Er, I mean… How about this – I can’t stop making sandwich-ish type dishes for dinner! Well, I promise you’ll forgive me after one tiny bite of this wrap, which is bursting with the fresh, smoky, and sweet flavors of grilled eggplant, zucchini, and sweet corn, and raw cucumber and tomato. Not only are Grilled Garden Wraps mouthwatering, but they’re also the next recipe in my Farmers‘ Market Recipe Collection! Anyways! Slice the eggplant into 1/2″ slices, then lay the slices on a cooling rack, and generously salt both sides. In 10 minutes, the salt will have drawn out the excess moisture, causing it to bead up on top. While the eggplant’s being leached, slice a small yellow squash into diagonal slices, about 1/2″ thick. Next, brush both sides of the eggplant and squash slices with olive oil, and season both sides with grill seasoning. To the grill! Remove everything to your platter, and head back in! That’s it!

I think most people tend to like the style of chili that they grew up eating. For me, that was a very “traditional” chili, so it shouldn’t surprise you that this chili recipe I created tends to favor the traditional style. I make chili when I need something for dinner but don’t have much time to cook. Crockpot Lasagna Lasagna was one of the first things I made from scratch in college when I finally started cooking on my own full time. It was so much work, and when I was finished I had used every pan in the kitchen and was completely exhausted. When I finally tasted it all could I mutter was…eh. It was okay, but by no means worth all that work, and I would have taken a store bought lasagna over what I had just slaved over any given day. When I came across a recipe for Crockpot Lasagna, I was intrigued. The preparation was quick and seemed way too easy compared to what I was used to. This is perfect for company when you don’t want to spend all day in the kitchen. So you can imagine my delight when three pouches of chicken, beef and veggie from The Stock Merchant arrived boasting about having none of the above. First impressions made a big impact with the absolutely gorgeous packaging. Prettiness aside, it’s what’s inside that counts, right? There is nothing worse than preparing a delicious home cooked meal to discover you don’t have any homemade stock in the freezer and have to use a carton or worse (gasp!) This recipe uses the free range chicken stock and is inspired by the famous Spanish dish of paella but uses israeli couscous instead of rice. I’ve still got a pouch each of the beef and veggie left. Crock Pot Bread Baking (Fast Bread in a Slow Cooker) When I moved to the midwest I was introduced to Crock Pot cooking. I had never even seen a slow cooker before and had no idea the range of foods that could be created in a plug-in cooking pot. Since then I have had everything from No-Peek-Chicken, Swedish Meatballs and Peach cobbler, done in one of these magic devices. When my husband was an art director Aveda they had “crock pot parties,” which meant everyone plugged in their slow cookers at their desks and made a dish to share. But, bread in a crock pot? 1 pound dough (Click here for our No-Knead 5-Minute Bread Recipe. Form the dough into a ball and place it on a sheet of parchment paper. Update: I just mixed up a fresh batch of ABin5 Peasant Bread Dough, let it rise for the two hours in the bucket, then formed a 1-pound loaf and stuck it in the crock pot. That means if you happened to click on the blog in the couple of minutes before I discovered my mistake, you saw these pictures with no words. One sweet reader even left a very tactful comment saying "I don't see where the ingredients are listed." I do want to be completely up front with the pumpkin lovers in the crowd, because I'm not sure I would say that you can really taste the pumpkin in this recipe. Heat a small amount of oil in a heavy pan, the brown the ground beef well, seasoning with salt and fresh ground black pepper to taste. Add a bit more oil and saute onions and green peppers a few minutes. Add the beans to the crockpot along with a can of pumpkin and two cans petite diced tomatoes.
