Easy Bake - Pot Brownies in the Microwave I've always been a little dubious about the power of eating pot. In most cases, I have failed to do a controlled experiment because I always end up smoking at the same time as I'm eating. Now, this weekend, I had a sore throat and felt like I shouldn't be smoking, so I had the perfect opportunity to give this a whirl. Usually when I'm baking brownies, it would be a social affair, so I'd make a big pan. But this weekend, it was just me. So along comes 'Warm Delights' the portion control dessert product pitched for single professional ladies. Here's how you can bake the perfect pot brownies for one or two people: 1) Crumble or chop the weed into a saucepan and cook with about a tablespoon of butter or veg. oil (butter is better). 2) Empty the mix into the plastic bowl they include. 3) Microwave for just 45 seconds. 4) Then you can fancy it up by squeezing on the chocolate frosting. 5) Eat it. 6) Wait 20-30 minutes and SURPRISE you're easy baked! +++++++++++++Update: June 2012 +++++++++++++

Basil-Wrapped Salmon and Zucchini Pesto Tagliatelle Recipe I made this "zucchini pesto" because I had a leftover zucchini, but actually it tasted pretty good. Wrapping the salmon in basil is a really healthy method of poaching the fish whilst giving it a flavour kick. First, make the pesto. Brush the zucchini slices, garlic and chilli with olive oil. Grill or griddle on a low heat until they have softened and have a little colour.Blitz the above in a blender. Add the basil leaves, tomato paste and lemon juice. This makes enough for at least 2 servings. Poach the salmon. Score and season the salmon with salt and pepper.

So much so that I started wondering what else I could do to replicate the Cinnamon Roll. I went with a buttermilk waffle… plain, with no cinnamon filling added. I drizzled the cinnamon-sugar filling on top. I figured… why not? My ideal cinnamon roll always has cream cheese icing, so a cream cheese icing drizzle was in order too. Lots of cream cheese icing, please. I could hardly wait to take a bite… to see if this whole Cinnamon Roll Waffle thing worked out. That’s about all I could eat. Jalapeno Popper Dog Jalapenos seem to be monstrous at the grocery store compared to their size from a few years back. I used this large size to my advantage, and was able to case a whole hot dog and some cheese inside a couple of cut jalapenos. The fun thing about this recipe is that you could make a whole dozen of them easily, pop em into a zip lock, and head out to your nearest B.Y.O.M. party (Bring Your Own Meat), camp fire, or other communal grilling situation. Make sure you grab the biggest jalapenos you can fine. Fist cut your dogs in half and put some cheese slices in the center. Hollow out the jalapenos and you're ready to go. It wasn't too hard to squeeze the dog in there. I lost some of the cheese while I was grilling this thing, but if I was paying attention and flipping it better, I wouldn't have lost as much. You have to cook it longer to make sure the pepper is blackened and tender not crunchy. Jalapenos can vary on spice level, but if you get all the seeds out these shouldn't be too bad to eat.

Like I mentioned in my post the other week, the last time I did a big cooking day, I had a big ah-ha moment. Although, I had a blast with Lauren, it was logistically very difficult to accomplish. So this latest big cooking day, I did it by myself and only did slow cooker recipes. Basically, all I was did was chop vegetables and assemble ingredients. Even with doing it this way, it was still a 3 hour affair, but during this time I was able to finish all the cooking AND the cleaning. Once I was done and cleaned everything up, I felt like I had invented electricity!

LaSaGnA TiMpAnO I went to see tUnE-yArDs on Monday night with some friends, and as always we wanted to cook a meal that somehow related to the show we were heading to. Sometimes this is hard to do, but other times it seems to come naturally. Finding culinary inspiration in Merrill's lyrics seemed like it would be tough, but my sister knew what she wanted to make without hesitation. "How about something layered, because of all the vocal and instrument layering in the music?" From there we worked together to come up with this deep, colorful, and multi-flavored lasagna version of a timpano. If you are using words like deep, colorful, and multi-flavored to describe something inspired by tUnE-yArDs, you already know you got it right! Start by making a lasagna crust. Finally got it together. Now it's easy, just start building the layers! Alfredo sauce with some salami goes first. After 3 alfredo layers, I switched to pesto. A cheese only layer, just for fun. Tomato sauce is last. All sealed up. After baking.

Grilled Guacamole Recipe Grilled Guacmole? Ummmm. Heck yes!! I made this recently for Tasty Kitchen and it was gooooood. You need to make it. And… wanna hear something really exciting. Okay….here’s the step by step for Grilled Guacamole: You need to prepare either your indoor or outdoor grill. Once the avocados have some grill marks, throw a few slices of red onion on the grill to char. Next up, let’s grill some tomato quarters! Once we’ve got everything grilled and set aside, place the avocado into a bowl and give it a quick mash. Next, grate some garlic over the avocado. Be sure to get all that fabulous garlic from the bottom side of your grater. Next, juice a lime or two over the avocado. Add the chopped red onion. And then the tomatoes! Throw in some chopped cilantro. Season the guac with some salt and a few turns of freshly cracked black pepper. And serve it up with some of your favorite chips!! Masa básica de ñoquis de papa Hay muchas recetas de ñoquis, elegimos ésta porque a nuestro criterio consideramos que es la masa más típica de los ñoquis de papas, lo que no quita que se le puedan hacer modificaciones. Eso queda a gusto de cada uno. La cantidad de harina es, por cada quilo de papas 300grs de harina aproximadamente. La variación en la harina debe ser muy poca para que los ñoquis queden con consistencia pero tiernos, que es la diferencia tan notoria con los ñoquis que no son caseros. Porciones: 4 INGREDIENTES 1kg de papas más bien grandes y parejas 300grs de harina 000 2 huevos Sal y nuez moscada a gusto PREPARACION Lavar bien las papas y cocinarlas con cáscara. Se puede cocinar la papa, al vapor, o en olla a presión ( puede llevar 12 a 15 minutos a partir de que comienza el silvido), de lo contrario ponerlas en una cacerola con agua fría y cocinarlas hasta que estén tiernas. Sabemos que están cocidas cuando al introducir un cuchillo en la papa y levantarla ésta cae sin esfuerzo.

The only condiment I used was light soy sauce - the pumpkin bathed the chicken in a lovely golden hue while providing a slightly sweeter flavour. For a finishing touch, stir in some Thai basil for that unmistakable fragrance and you have yourself a great stir-fry that does not require much time and effort. This just goes to show how much there is to learn every single time I cook something up - life is one continous learning process :) (both in and out of the kitchenof course). Serving suggestion: Steamed Rice Ingredients: 300g of boneless chicken thighs (substitute with breasts if you like) 3/4 cup of sliced pumpkin 1 red onion, sliced into wedges 2 bird's eye chili peppers, sliced (remove seeds for less heat) 2 tablespoons light soy sauce or to taste 1/2 cup Thai basil, rinsed (leaves only) Method: Heat up your wok till almost smoking. Serve hot with rice.

Scalloped Hasselback Potatoes “Scalloped” is an attractive word, isn’t it? When I hear it I think of several things: first, there’s scallops, as in the seafood—totally delicious. Then there’s the scalloped shape that can live on the edge of a pair of shorts or on the collar of a woman’s blouse—always pretty and dainty. And of course scalloped potatoes also comes to mind, which carries my imagination to a land of crispy potato skins drenched in a sea of cheese and cream. I can think of no better place to exist, actually. The first players up are: a few Russet potatoes (I’m sure other varieties will work equally as well), Parmigiano-Reggiano and butter. Start by scrubbing your potatoes good and clean. Then, using a sharp knife, make slices across the potato, being sure to stop before you reach its bottom. Cut up your butter. Then do the same with the Parmigiano-Reggiano. Next, open the potatoes’ crevices and shove the parmesan and butter, alternating between the two. They’ll come out looking all cheesy and inviting.
