Double Rainbow... All the way across my plate! So nine months is a looooooong time in Internet Viral Video Land, but who remembers the Double Rainbow guy? If you lived under a rock last year, allow me to fill you in. Paul "Yosemite Bear" Vasquez filmed a video of himself (presumably while under the influence of some kind of illicit substance) reacting to the emotional and profound sight of a "double rainbow" in his yard in Yosemite National Park and then posted it to YouTube. So what does this all have to do with cake? When Laura's birthday came along this year, I knew what I had to do. Mission accomplished, right? Step One was to mix myself a Roy G. My husband was not too pleased when he got home and saw the mess. Step Two was to actually pour the batter in to the cake pans. While the cakes were baking, I decided to start cleaning up before Paul had an aneurysm. The best thing about these cupcakes is that, once they are iced, they just look like a normal cupcake. Success! Happy Birthday, cuz!

Hash Browns : Cheap Eats [ Currently Eating: Leftover Chicken ] More potato stuff – I just can’t seem to get away from it. Actually, I almost didn’t post this one because I thought I had already done a post on Hash Browns but it turns out that one was on Home Fries. I dunno if a lot of people go through the trouble to try make hash browns at home, but I’ve tried several times with varying degrees of success. I guess you could always head over to IHOP or some similar breakfast place to get them. Hash Browns are pretty cool to make, because the list of ingredients is so short. Hash Browns1 large potato — $0.40 1-2 tbsp butter (from $1.00 4 oz stick) — $0.13 (or 1-2 tbsp of oil or cooking spray) salt, pepper — negligibleTotal: $0.53 Russets are probably easiest and most people have ‘em around. Hash browns are supposed to have a sort of creamy or fluffy texture on the inside with a nice crunch on the outside. In any case, you need to experiment to find the best balance of oil to butter and pan type for your liking.
