I own a ton of cookbooks, but if I had to choose the one I use the most often in my kitchen, it’s Fresh from the Vegetarian Slow Cooker by Robin Robertson. This is the book that has notes scrawled all over the pages and food spatters on the most frequently used recipes. If you’re a vegetarian and you own a slow cooker, you should really buy this book! The thing I love about it is that the recipes are mostly unfussy. When I was working full-time and going to library school full-time (yeah, that happened), I worked my way through a good half of the recipes in this cookbook. It’s not super fancy, it’s not a show-stopper, but it’s a delicious, hearty soup for a chilly fall evening. Split pea soup in a can from a place called Pea Soup Andersons in Buellton California. Now if you've never heard of Buellton California, it's a little town off the 101 on the way from San Francisco to LA. Sweet Coconut-Butternut Crockpot Soup Can you ever have too many butternut squash soup recipes? I think not! The way those things grow and the enormous size you can buy them in can make soup that lasts you a lifetime. In fact, you'll want several recipes in your arsenal. Natalie gave us one of the squash in this photo above. We used one end of it to get 3 cups of chopped squash for our soup, and it made an entire crockpot full of it. First, our ingredients: Second, we cut the end of of the squash, scoop the seeds out and peeled the skin off. Then, we chopped enough squash and sweet potatoes to get us 6 cups worth. From then, it was easy, our recipe was: 3 cups butternut squash, chopped3 cups chopped sweet potato (about 1 large sized potato)1 onion, chopped2 cups chicken broth1/4 cup butter2 cups half and half (or coconut milk)1/2 tsp cumin2 TBL shredded coconut Place squash, sweet potato, onion, 1 cup of chicken broth and butter in a slow cooker, and cook on high for about 4 hours. *Coming Soon!!
