Crockpot Pork Posole Stew Recipe This dish is kind of like Disneyland for both the OCD list makers who obsessively plan meals weeks ahead of time, and for those of us (eh-hem, I’m using the collective “us” so I don’t feel so alone) who somehow make their way to the grocery store before 1 p.m. to find a fresh, juicy Boston Butt ready to roast. By the way, who came up with the name Boston Butt? I feel a little like Beavis whenever I say, “Boston Butt, hee-hee, hee-hee.” Smudge loves saying it. That’s weird. But I digress. You know how there are some of those crock-pot recipes where you have to brown the meat prior to cooking it, and then adding it into the pot and having to go through all of the extra steps? Just pop the butt into the pot, toss in some onions and flavorings, cover with a lid and ba-boom, dinner is ready to roll in 5-8 hours. Lasagna Roll-ups Lasagna is a pretty classic comfort food, but not one that I would normally make for a weeknight dinner. With just the two of us eating, an entire pan of lasagna is enough food to eat for a week so unless we're expecting company, lasagna is a rare treat. If you are like me, lasagna roll-ups are the solution. You can make as many servings as you need and you can do it in less time. The process starts out the same, boil the noodles, brown the meat and make a sauce. Make a ricotta mixture and then you just roll it up. I generally swap whole wheat pasta for regular pasta and use ground turkey instead of ground beef to lighten up the recipe. What is the first thing you hear from people when they talk about Texas Roadhouse? I hear "I love their rolls," I have never heard anyone start out by saying "I love their pulled pork sandwich," have you? Don't get me wrong, they have really good food too, but their rolls are unbeatable. I found this copycat recipe floating around the blog world and I couldn't wait to give them a try. Well, the moment you have been waiting for . . . . Texas Roadhouse Rolls - Copycat Recipe 4 tsp. active dry yeast 1/2 c. warm water 2 c. milk, scalded and cooled to lukewarm 3 Tbl. of melted butter, slightly cooled 1/2 c. sugar 2 quarts all purpose flour (7-8 cups) 2 whole eggs 2 tsp. salt Dissolve yeast in warm water with a teaspoon of sugar; let stand until frothy. Crockpot BBQ Beer Chicken What is up with beer and me lately? I can’t get enough of the stuff. If I’m telling the truth, I really enjoy cooking with beer much more than I like drinking it. I do like to drink it on occasion, but it’s not always my beverage of choice. However, when it comes to cooking with it? Best flavor ever. Basically, I love replacing water with alcohol. And now… a peek into what a mess my kitchen appliances really are. You don’t even want to see my stand mixer. Look at that bun. I don’t think it’s a stretch to say that this is the best chicken I have ever made in the crockpot. People… I live with a man who seriously eats chicken at least five days a week for lunch and dinner. So, I’m convinced it’s a combination of the perfect marriage between beer, spices (I freakishly love onion powder and smoked paprika together… give it a whirl) and sauce (Bone Suckin‘ is the best) that makes this so amazing. They are pretty knowledgeable-so my job is easy:) I think it is fantastic that they want to learn how to cook at such a young age-they are in the 3rd and 4th grade. Since we don’t have any kiddos yet, I am glad I get to work with these kids. We have a great time in the kitchen. On Friday we made homemade soft pretzels,the traditional salty ones and cinnamon and sugar pretzels. For fun, we also made pretzel bites. everyone loved these. Is everyone ready for the big game? I guess rigatoni standing at attention has a way of impressing children? The key to this recipe, as far as taste goes, is using quality ingredients. Let's put this together: You will need: Crushed tomatoes, fresh garlic, Parmesan cheese and mozzarella. Ground beef, rigatoni pasta, olive oil, butter, salt and pepper are also needed. In a large pot of salted boiling water, cook 1 pound rigatoni pasta until slightly underdone (I cooked mine for 12 minutes when the box indicated 14 minutes). Heat remaining 1 Tablespoon olive oil in a large skillet over medium-high heat. Add 1 can good quality (28 ounces) crushed tomatoes; simmer until thickened, about 20 minutes. Spicy Dr. Pepper Shredded Pork It came to me in a vision, this bizarre decision to cook a pork butt in Dr Pepper. Then again, so did my decision to get a Basset Hound. First of all: pork butt.
