Flourless Chocolate Brownie Cookies....so easy & so good!! | Creative Kitchen I know it’s hot out and the last thing you want to do is turn on your oven. I get it! But for these little gems I think it’s worth it. These flourless cookies popped up on my radar this past spring when I was really at the height of my low carb experiment. I found them over at Recipe Girl and added them to my long list of recipes to try. So when vacation time rolled around last month I figured it was the perfect opportunity to make these. Let’s just state something I’m sure most of you already know……wax paper is NOT the same thing as parchment paper. Ten minutes later we were wondering why there was an awful lot of smoke pouring out everytime I opened the oven door. The girls still devoured them though they were STUCK to the wax paper. I didn’t let that deter me though, and the next day I set to making them again. So you know when I got home the next week I just had to tackle this once and for all. Strawberry Nutella Poptarts Friday, February 10, 2012 Strawberry Nutella Poptarts* In almost 24 hours I am going to be on live television. Seriously. I have no idea what I am going to wear or say….and I’m pretty sure the producer over at Good Morning Jacksonville has no idea what she has gotten herself into. While I may not have it all figured out just yet, I have decided that I will talk like Julia Child and only refer to myself in third person. First, take some store bought pie dough. Roll out the pie dough till it’s pretty thin. On one pie dough rectangle, spread a layer of Nutella. Cut a strawberry slice into the shape of a heart (slice a strawberry lengthwise into slices and then curve out the stop with a paring knife to create the heart shape). Using the strawberry heart as a pattern, cut out a heart shaped hole in the second piece of dough. Place the strawberry in the center of the nutella/strawberry jam mixture. Using a fork, seal the edges. Bake at 350°F for 12-14 minutes, or until golden brown.

Oven Roasted Chickpeas with Moroccan Spices When hunger strikes, do you grab the first food you see? Unfortunately it isn’t always the healthiest snack choice. Well you’re not alone! Although I hate to admit it, I sometimes don’t choose the best snacking choices. Most of the time, if I plan ahead, I am a smart snacker. I try to eat something little every two to three hours and keep something in my purse and car just in case. Chubby Hubby Buckeye Peanut Butter Truffles Recipe I've had my eye on these for a long time, but I knew my waistline wouldn't thank me once I made them (I have no self control). I finally gave in and have made them more than once! They are so easy and DELICIOUS! I love anything with peanut butter and chocolate. As you can see, there are only 4 left from the whole batch. So of course, I had to make another batch to bring to the neighbors! Make them. Chubby Hubby Buckeye Truffles Recipe: Ingredients: 1½ cups pretzel pieces ½ cup creamy peanut butter 1 tablespoon unsalted butter (room temperature) 2 tablespoons light brown sugar dash of salt 3 tablespoons powdered sugar 1 cup milk or semisweet chocolate chips (I used milk) 1 tablespoon vegetable shortening Directions: Place the pretzel pieces in a resealable plastic bag and crush into very small bits (a rolling pin works great for this- put your kids to work!). Makes about 18 truffles. Looking for more truffles?

A Year of Slow Cooking Peanut Butter Graham Cracker Balls Over Memorial Day weekend a couple weeks ago at my father’s house, I needed to make a quick, yummy and easy dessert for the entire family to enjoy. Well, I didn’t need to make one but I wanted to, and believe me, my family wanted me to as well. We are a big peanut butter and chocolate family so I thought I would whip up a quick batch of peanut butter balls to compliment the Raspberry Magic Balls that I already had made. I’m not a one dessert-making gal much to my sister’s chagrin. I like everyone to have a choice. So, I decided to make the peanut butter balls but quickly realized we were out of powdered sugar. Peanut Butter Graham Cracker Balls Makes: 20-24 balls Ingredients: 1 cup peanut butter (I used crunchy) 1 1/2 cups graham crackers crumbs ¾ cup mini chocolate chips or Heath bits 1 – 1 ¼ cup chocolate (I used semi-sweet chocolate) Directions: 1. 2. 3. 4. 5. *If you like this recipe, please PIN it to share it! Nutela Rollups The other night I had a couple friends over for dinner and turned to Pinterest for menu inspiration. I used this as my inspiration for the main dish But I served it on top of pasta and instead of Panko bread crumbs I made my own. And I use my favorite pre-made tomato sauce to cut down on prep time. So so delicious. I also made this as a side dish. I also added broccoli and use a balsamic glaze instead of a regular balsamic vinaigrette. Then for dessert, I made these. For these, I never even clicked the recipe link on Pinterest but the picture gave me a perfect jumping point. I highly, highly suggest any of these three dishes. Do you use pinterest for dinner ideas? And thank you to all of you about the sweet words regarding my e-design ventures!
