Insanity. That’s what this is. Pure In.San.It.TEEEEE. You know those days when you’re in desperate need of sugar and you’ve already downed more gummy vitamins than recommended while seriously considering how many more you can ingest without causing severe harm to your internal organs? They’re just so gooooood. Well… in that case you should make some homemade snickers bars. And I KNOW you know what I’m talking about. I spent the majority of my pre-pubescent and adolescent years scheming just how I would be able to steal my brothers’ Halloween candy. Then I went through a SERIOUS phase of those Snickers ice cream bars. And that you can eat a million of them. These days, it’s rare that I crave actual candy, often preferring some chewy cookies or super rich cheesecake or a bar of amazing chocolate that costs thrice as much as the recent organic meyer lemons I purchased. They are the peanut butter to my jelly. The salt to my pepper. The broccoli to my… wait, no. And the fabulous part? nougat layer

Baked Eggs with Bacon and Spinach Do y’all remember the scene in Runaway Bride (that’s an Oscar contender if I’ve ever seen one…) where Julia Roberts realizes that she doesn’t know how she likes her eggs? You know, because she’s always turning herself into the girl that the guy she’s marrying wants to be with? Yeah. That’s not me. I know how I like my eggs, although I will say that it depends on the day. If it’s a scrambled kind of day then I want them scrambled with NO MILK, a tab of butter, and salt and pepper. Dijon Chicken Club Sandwiches By the time I get home from work, I often don't feel like cooking a big meal. But if I've done some of the prep work in advance, it becomes really easy. This is pretty much my weekday plan. If I didn't do this, we would end up eating out a lot more often, or making frozen pizzas. When ever I grill chicken, I make a couple extra pieces so that I have leftovers for salads or sandwiches during the week. If I'm making a meat sauce for pasta, I like to double the meat and put half of it away to make a pizza or tacos later in the week.

See, I was this good girl who went shopping for my mom during the weekends, all on my own, so that my mom can relax her feet. Saucy Greek Baked Shrimp This is one of my favorite quick and tasty dinners. I come from the camp that feta makes anything better, and this baked shrimp is full of it. An easy, flavorful sauce is thrown together with sautéed garlic, canned diced tomatoes and spices and baked with the shrimp. You’ll definitely want a loaf of chewy sourdough bread to sop up all the sauce on your plate! Orzo pasta or angel hair are other nice accompaniments to this dish. It’s the perfect weeknight dinner and a staple at my house!

Beer Battered Onion Rings One day, months ago, after Ben and I were watching a show on the Food Network about fried foods, Ben had asked me to recreate the beer battered onion rings that were featured. Knowing I’m not one to frequently bust out a vat of oil to “waste” on frying, I quickly filed his request in the very back of my mind. No, seriously, the very back shelf of my brain that is probably full of dust and other undesirable recipe requests. Onion rings have never been one of my favorite foods. The only time I’ve ever had them was when someone else ordered them at a restaurant and shared one or two with me. Nutella Mug Cake I have been experimenting with different mug cakes every since I heard about them about a year ago. None of them have been winners. They were either too chewy, too dry, or not sweet enough. Well, I continued experimenting, and thought why not add some decadent Nutella into the mix. I modified the classic mug cake recipe, added Nutella, and a little more milk and oil than I had been using before.

Homemade Mozzarella Cheese Mozzarella is one of the easiest cheeses to make, it only takes 30 minutes and the taste can't be beat! The ingredients are simple although a couple of them you may have to search a bit for, but the end result is worth it--especially when you can say "I made it myself!" Homemade Mozzarella Cheese 1 gallon whole milk (just be sure that it is not Ultra-pasteurized, any other kind will work, store bought, fresh from the cow (or goat)) 1 tsp. citric acid* 1/4 rennet tablet* 2 tsp. cheese salt* A big pot Thermometer Slotted spoon (please ignore the mess in the background, we still haven't finished putting things back together after our wall project)
