Blueberry Pancake Whoopie Pies with Ricotta Cheese Frosting | CouponClippingCook Blueberry Pancake Whoopie Pies with Ricotta Cheese Frosting I just bought a Whoopie Pie cooking pan (with a coupon I might add) and was trying to think of a fun and different recipe to make with it. Then I had this idea based on the food channel show, “The Best Thing I Ever Ate”. I remember one episode where one of the food stars talked about a blueberry pancake with ricotta cheese in it. So, with that inspiration I came up with this recipe. I just added blueberries to the batter. This frosting/filling also includes some cream cheese, and I used real maple syrup in place of vanilla extract. I made some mini pancake muffins with the leftover batter and frosted them with the delicious ricotta cheese frosting. It’s pretty hard to take a bite out of these mini muffins though, you’ll need to pop the whole thing in your mouth at once. Let’s check out the ingredients. For the Pancake Whoopie Pies: For the frosting/filling: Here’s how to make it. Preheat the oven to 350 degrees F. …..then beat the egg.

Thick and Chewy Chocolate Chip Cookies I think that just about everyone I know is constantly on a search for the perfect chocolate chip cookie recipe. Most (myself included) have been let down by the recipe on the back of the Nestle Tollhouse chocolate chip bag, and there are many recipes floating around the Internet that seem to gain popularity and become fads before dying off when people move on to the latest and greatest. I was really please with the cookie I created last fall, as it resulted in the chewy texture I was looking for. But these Thick and Chewy Chocolate Chip Cookies, they really take the cake. Honey Fig Scones I love scones so, so much. By and large, they are easy. And delicious. And totally adaptable. You can make scones out of virtually any flavor with any add-ins you’d like. As with all scones, these are incredibly easy to throw together – you need only a couple of bowls, a whisk and spatula. A quick note – I forgot to check my oven thermometer on these and they got a little over-done without my realizing until I spotted the actual temp. Cilantro Lime Chickpea Salad When Nate and I met for the first time I smelled like a burrito. Although I’m not proud to admit it, I will say it was because I was dragged to a party with one of my best friends after working an open-to-close shift at a local burrito restaurant in college. I was tired. Dreams do come true! One of the things that I learned to love while working at Cilantro’s Burrito Grill was to enjoy cilantro. Hey, my man likes food. 2 cans chickpeas, drained and rinsed4 loosely packed cups fresh spinach1/2 onion, chopped smalljuice from 4 limes1 bunch of cilantro (about loosely packed cup)3 Tbsp sugar2 Tbsp dijon mustard2 cloves garlic, finely minced or grated on a microplane1/2 Tbsp chili powder1/2 cup olive oil Chop the spinach very finely (feel free to use a food processor and pulse 3-4 times). Cherry Couscous Salad Sometimes I decide to cook something because it’s a recipe I’ve done a million times and I know that it’s going to taste amazing, like cheddar & pinto bean patties. Sometimes it’s because I see a recipe in a book, magazine, or blog and am immediately compelled to give it a try, like Smitten Kitchen’s pasta with goat cheese. Then, I have the days when I realize that I’ve had that box of couscous in my cupboard for a year, a YEAR, and by George, I’m going to do SOMETHING with it. That’s when I make things like Couscous Salad with Cherries.
