Intro … and a killer pickled garlic scape tartar sauce – if I do say so myself. I’m not one to shy away from fried foods. What I do tend to avoid are large stinky messes. Fried foods are notorious for producing an enormous mess. But when I became the proud owner of three Walla Walla onions so fresh the dirt was still attached – my first thought was onion rings. In order to avoid the mess I set out to make oven-fried onion rings. If you, like me, love the grease but hate the mess then let us celebrate in the name of laziness for a recipe that takes more time to clean the grease off our fingers than off our counters. Time to Stop Talking About Low-Fat, Say HSPH Nutrition Experts - HSPH In the Media - News at HSPH It is time to end the low-fat myth, Harvard School of Public Health (HSPH) nutrition experts told food industry leaders at the seventh annual World of Healthy Flavors Conference held in Napa, CA, from January 19 to 21, 2011. The conference, co-hosted by the Culinary Institute of America and HSPH, brings together nutrition researchers with representatives from schools, supermarkets, and food industry goliaths such as Burger King, The Olive Garden, and Panera Bread to share strategies for offering Americans healthier menu options. HSPH nutrition department chair Walter Willett and associate professor of epidemiology Dariush Mozaffarian, along with Ron Krauss of Children’s Hospital Oakland Research Institute, presented on the “Focus on Fat” panel. They encouraged audience members to avoid “low-fat” terminology and thinking, since diets low in fat are often high in sodium and carbohydrates from sources such as white flour and rice, refined snacks, and sugary drinks. Non-Dairy Milk Additive Could Make You Sick Do you choose soy milk, almond milk, kefir, or low-fat dairy because you think it’s better for your family? A recent report found that even these “healthy” products could be contaminated with a substance that is classified by the WHO’s International Agency for Research on Cancer as a “possible human carcinogen.” The Cornucopia Institute, an organic watchdog group, recently published a report that shows a wide variety of organic brands of both low-fat dairy and non-dairy products contain carrageenan, a seaweed derivative used as a stabilizer and thickener in foods. Carrageenan keeps ingredients in beverages and creams from settling, so they can be consumed without shaking and have a pleasant creamy texture in the mouth. Unfortunately, research funded by the National Institutes of Health raises serious concerns about harmful effects of carrageenan as an inflammatory agent on the human gastrointestinal tract. Sure, I could have mocked something up with watered down coffee, bread, and cheese, but a fake dish never looks quite as delicious as the real thing and I figured if I was going to take the time to fake something, I may as well take a little more time and do it right. A good French Onion Soup (a.k.a. soupe à l’oignon gratinée) has a crisp layer of bread topped with a layer of crusty caramelized cheese. Poking a spoon through the crust reveals a deep-brown bottomless pit of flavor that hammers home the rich beefy stock made sweet and nutty from caramelized onions. Because there are so few ingredients, the trick is to get the onions caramelized all the way, and to use a good beef stock. Broccoli Cheese Soup: Panera Bread Copycat Recipe On Wednesday my sister and I volunteered to make the soup supper to go with the Advent service at church.
