Sugar Crusted Chocolate Chip Muffins: - StumbleUpon After the holidays I have the hardest time falling back into the rhythm of my normal life. As I sit here looking around and the gift boxes, empty toy boxes and those dang twist-tie things ; and don’t even get me started on the holiday decorations that eventually need to be packed away, I’m feeling extremely disorganized and overwhelmed with it all. I have to work the next couple of days and New Year’s weekend at the hospital and I’m wondering when I’ll get to it all. In the same breath, didn’t I just put all this stuff up? I can tell ya with certainty that I’d rather curl up with these muffins, a cup of coffee and watch endless hours of The Cooking Channel than tackle the after math of Christmas. It all begins with a few basic pantry ingredients. Combine all of the dry ingredients into a large bowl, and add the mini chips. Stir to combine. Crack-alack one egg and measure in the vanilla extract. Drizzle in the grapeseed oil. Add in the milk. Add the wet ingredients into the dry. Yummmmmy…

30 Minute White Bean + Chicken Soup Dinner tonight! Around this time last year, I made my first batch of chickpea chicken soup and fell in love. I don’t know what it about throwing a boatload of ingredients into a pot of simmering broth, but it ignites an itsy bitsy fire in my soul. Well. That sort of sounds annoying, huh? Whatev. Wanna hear something funny? Okay. Mr. You know how much I love that. That’s not the nonfunny part. Oh wait. But really. I have pretty much lived on green things that I thought would cure me and slurps of soup, this being one variety. So now… Mr. White Bean Chicken Soup serves 4 3 boneless, skinless chicken breasts, cooked and cubed 2 slices thick-cut bacon, chopped 1 small sweet onion, chopped 1 cleaned and trimmed leek, thinly sliced 1 1/2 cups sliced mushrooms 1/4 teaspoon pepper 1/2 teaspoon smoked paprika 4 garlic cloves, minced 1 (6 oz) bag fresh spinach 1 can (15 oz) cannellini beans, drained and rinsed 2 cups low-sodium chicken stock 2 cups water 1/4 cup freshly grated fontina cheese + more for garnish

Creamy Garlic Alfredo Sauce {My Go-To Dinner Saver!} I am not (not!) exaggerating when I say this quick, creamy garlic alfredo sauce has changed how I view non-dinner nights. You know. The problem is, on nights like that, I just can’t handle the thought of dinner approaching and knowing I’m going to have to scrounge up something my kids will eat but I’ll probably find gag-worthy. Enter this sauce. We’ve made this no less than 10 times in the last month, and I have never, and I mean never, seen my kids gobble up anything so quickly. Embarrassingly, I have to admit, this sauce is even on the menu this week. Creamy Garlic Alfredo Sauce Note: I've only ever used 1% milk in this sauce and it works great for our tastes. Ingredients 2 tablespoons butter 3 cloves garlic, finely minced or pressed through a garlic press 4 ounces cream cheese, softened and cut into 6 pieces (see note above) 1 cup milk (see note above) 3 ounces Parmesan cheese, grated (about 1 cup) 1/2 teaspoon ground black pepper 1/2 teaspoon salt, more to taste, if needed Directions

Kit Kat Bars Recipe These homemade kit kat bars are supposed to taste like the popular candy bar of the same name. They do have the nice chocolatey crunch of a Kit Kat candy bar, but these bars have more of a salty-sweet flavor than the candy bar. The kids tell me they like the taste of these bars even better.
