If you've been around a while you know that I like to make some sort of dessert or treat for my husband to take to work with him on Mondays. Food is my love language. I am not a diet friendly friend. It's just a small way that I feel I can help him with his work day...he and all his coworkers have a super long meeting on Mondays and...well, it's Monday...how can dessert not help that? It gives me a good excuse to try new recipes and now all of his coworkers expect and look forward to what I will make and send in. Start by cutting up eight cups of apples into small 1/2in bits. Mix the apples with: 12 tablespoons of flour 1 1/2c of sugar 4 heaping teaspoons of cinnamon 1/4-1/2 teaspoon of nutmeg (depending on how much you like nutmeg...you could also leave it out) You will also need: 4 tablespoons of chilled butter cut into 24 equal portions. Make sure you stir everything around getting the apples nice and coated. Unroll your first pie crust and cut several circles out. And YUM!

The Best Recipe I've Ever Messed Up +Chewy Granola Bars Hmm, what to call this recipe?? I kinda messed up a chewy granola bar recipe and ended up with absolutely awesome oatmeal, chocolate, peanut butter heaven!! How is that for a name?? Oatmeal Chocolate Peanut Butter No-Bake Candy Bars *it is sorta like a chocolate oatmeal no bake cookie, but extra creamy and special. it almost reminds me of fudge, but with the added texture of the oats and occasional chewy sweetness of the dried cranberries--yum! 1 cup peanut butter 2/3 cup honey 1/2 cup coconut oil (no substitutes, this is what gives its creamy texture and flavor) 2 cups oats (not instant) 1 1/4 cups mini chocolate chips 3/4 cup dried cranberries In a medium sized saucepan, melt together peanut butter, honey and coconut oil. Cauliflower Pizza Bites When I am trying to eat better (ie: more veggies less chocolate) then I find it really helpful to have healthy snacks available for when I get the munchies. When I want something to snack on, I want it NOW.  Let me start off by saying, these tasted very good. And...they were fairly simple to make. And....they are a great, healthy alternative for a snack. And... they freeze well so can be on hand for those cravings. Now...that being said....I probably won't be making them again anytime soon. Why? Well...let me show you a photo... This is my mini muffin tin in the aftermath of these pizza bites. I had to scrub out 24 tiny little circles and 12 tiny little squares. I mean...S-C-R-U-B... Not cool. The cauliflower mixture really cooked right onto the pans. Oddly enough, the pizza bites popped right out the pan (after I ran a butter knife around the edge of each one) and held their shape great. To prevent myself from inhaling it all in a 24 hour period, I put some in the freezer, but then immediately thought of this bread I’ve been wanting to make. They hang out in my booty. {TMI? This bread is the very reason why I run. And believe it or not, this is super simple to make! So, that’s all the info you need to know, m’kay? First thing you’re going to want to do is grab all your ingredients. Into a mixer bowl, add in your water, yeast and honey. Once your yeast has gotten foamy, stir in the salt and the flour in 1/4 cup increments. One hour later, I got me some purdy lookin’ dough! Punch that dough down and divide into two equal balls. Cover with plastic wrap and let it rise for 30 minutes. Hello, lover.

Southern Biscuits with Chocolate Gravy This biscuit post has been a long time coming. Week after week, as I've decided on new blog entries I would always consider the beloved southern-style biscuit. I dismissed it often because it seemed too daunting a task. ... falling and breaking said eggs and never once being chided for it; having tears wiped away and then being fed buttermilk biscuits with homemade apple butter. Impossible. I can't help but get a little misty-eyed, and simultaneously feel silly for having such emotion for the humble biscuit. I'm so happy to be able to share my regional food with you. Another food that is a big part of southern heritage is chocolate gravy. As a rule, White Lily self-rising flour is always used to make perfect southern style biscuits. Biscuit making is really simple, and the only way you can mess it up is to fuss over it too much. Turn the sticky dough out onto a floured surface and fold (or knead) together about 5 or 6 times. ...an old tin can with a sharp edge. Bake for 15 -20 minutes.

Orange PushUp Smoothie When I was growing up, one of my favorite things to do was ride my bike with my friends to the local gas station’s mini-mart and reach into their freezer case and pull out an Orange Push-Up. If you like Orange PushUps, Orange Creamsicles, or Orange Julius this is the smoothie for you. I loved Push-Ups and seeing those brightly colored dots meant that creamy orange goodness was soon going to be mine. I love it when Push-Ups begin to melt because they taste even sweeter, creamier, and better. The same was true with this smoothie. As it began to melt, it got even better. Clover Lane: A Crowd Favorite: Feta Dip I thought I’d share this awesome super easy no-cook appetizer that has always been a hit. This is that ONE recipe that I always get asked for the most. And it’s ridiculously, embarrassingly easy. The good news is that you can order these push ups and make cake push ups for you and all of your friends! One of our members was nice enough to send me 6 to experiment with!! I made some cute little chocolate toppers that I piped with melted chocolate bark… but they would have been cute also with just a swirl of icing! Finding a way to display these is a little tricky. Crock pot Bacon Cheeseburger Soup! | Living Life of Riley Today in North Carolina it has be wet, rainy, and rather dreary. I decided early on in the day that it would be a perfect night for soup. I rambled through the cabinets and put this together. Here are my ingredients…. Ingredients Crockpot1lb of ground beef1 container of Philadelphia Cooking Crème- Original Flavor6 slices of bacon1 bag Ore Ida Hasbrowns1 velveeta cheese 8oz stick1 chicken broth stock 32oz.small onion diced I fried the hamburger up, cooked the bacon in the microwave and crumbled, and then dumped all the ingredients in the crock pot. In fact, these were probably the least time-intensive food at my Cheesecake Extravaganza. Yet, I had more than a few people come up and proclaim their love for the finger food.
