Epic Crispy Quinoa Burgers Topped with Sweet Potato Fries, Beer Caramelized Onions + Gruyere Where do I even begin? These burgers have so much going on. Hence the longest name I have ever posted and will hopefully ever post….hopefully! I am going to get so much flack for that title, but I don’t even care. Oh and if you can believe it, I actually left something out. Alright, let’s just start with the main idea for these quinoa burgers. I wanted to create a quinoa burger that would actually rival the typical beef burger. I know you are thinking it’s just not possible, and trust me, I totally thought the same thing. So I started with that base, but swapped the regular quinoa with red quinoa, took out the buffalo sauce and added some seasonings and cheese. From here my idea of an epic burger just grew and grew. Oh and if you are wondering, the Epic Burger is actually a thing up here in my very snowy and cold mountain town. My brothers wait all year for that burger. It’s a Christmas Day only Burger. When I hear it I think of several things: first, there’s scallops, as in the seafood—totally delicious. Next, open the potatoes’ crevices and shove the parmesan and butter, alternating between the two. When they’re done baking, you’re still a few minutes away from cheesy gloriousness! They’ll come out looking all cheesy and inviting.

Tomato Bread Soup I made this soup yesterday. It was a weird, kind of grumpy day. I had to make two batches of this banana sweet potato bread I am going to share in the next couple days, (because I forgot like half the ingredients the first time.) Then I realized I didn’t have any basil, so I went to the store to get it. 1) In a large pot, melt the butter over medium heat and add the onions and a sprinkle of salt. 2) Let the onions sweat until soft and tender, about 5 minutes. 3) Add the garlic and cook until soft. 4) Add the tomatoes and stir everything together.

Before you go thinking I'm some kind of charitable, goodhearted soul, I must tell you that the only reason that I do it is because I LOVE COOKING. In case you hadn't figured that out yet. Okay, so I was like, "Whadaya think, Nemo? Will two huge pots of soup, a crockpot full of barbequed meatballs, five trillion chicken salad sandwiches, fifty thousand and two loaves of bread, and a couple bazillion desserts cover it?"
