Cauliflower Crust Pizza I came across this cauliflower crust pizza on Pinterest, and was instantly intrigued. A low-carb pizza? Sign me up! I was skeptical, of course, but curious enough to try it and see how it tasted. My husband isn’t a huge fan of cauliflower, so I planned on making the pizza before he got home from work. So the general conclusion…Healthy, tasty and husband-approved? Cauliflower Crust PizzaYields: 1 serving* Ingredients: 1 cup cooked, riced cauliflower 1 cup shredded mozzarella cheese* 1 egg, beaten 1 tsp dried oregano 1/2 tsp crushed garlic 1/2 tsp garlic salt Olive oil (optional) Pizza sauce Mozzarella cheese, shredded Other additional toppings of your choice *Many people have commented and said that the amount of cheese can be reduced by half, and still taste just as good! Directions: To rice your cauliflower, take 1 large head of cauliflower, remove the stems and leaves, and chop the florets into chunks. To make the pizza, preheat the oven to 450 degrees F. Life can be cruel….. So it is cruel irony that I made this cake and don’t get to eat it(dreaded diet). Fortunately this is something my husband will gladly eat. But enough about my sorrows. One of my favorite chefs of all time is Marcel Desaulniers. He is most known for his one cookbook, Death By Chocolate. And as much as I love him he does have a downfall…he makes really complicated desserts. Peanut Butter Chocolate Chip Cake 2 ounces unsalted butter 1 cup all purpose flour 1/4 tsp baking soda 1/4 tsp baking powder 1/4 tsp salt 1/2 cup tightly packed brown sugar 3 ounces creamy peanut butter 1 large egg 1 egg yolk 1/4 cup sour cream 1/4 cup hot water 1/2 tsp pure vanilla extract 1/2 cup semi sweet chocolate chips Preheat oven to 325F. Grease three 9 x 1 1/2 inch pans. Combine flour, baking powder, baking soda, and salt. Mix together brown sugar, peanut butter and butter for two minutes. Chicken Rollups #2 We both really liked this dish. It is a kicked up version of my usual Chicken Rollup dish that we love. I got 14 rolls out of this recipe. I made the whole recipe so I could eat leftovers while Tadd is out of town. This is a quick weeknight meal. Chicken Crescent Roll Casserole adapted from Recipezaar.com 2 (8 ounce) cans Reduced Fat Pillsbury Refrigerated Crescent Dinner Rolls 1 (10 3/4 ounce) can 98% fat free cream of chicken soup, undiluted 3/4 cup grated cheddar cheese or swiss cheese (or any cheese of choice) 1/2 cup milk Filling 4 ounces cream cheese (very soft) * I used 1/3 less fat cream cheese* 2 tablespoons butter (very soft but not melted) 1/2-1 teaspoon garlic powder 1 tsp minced onion flakes 2 large cooked chicken breasts, finely chopped (or use about 2 cups, can use cooked turkey) 1/2-3/4 cup finely grated cheddar cheese 1/2 tsp seasoning salt 1/2 tsp ground black pepper (or to taste) 2 Tbsp. milk 1-2 cup grated cheddar cheese (for topping) Set oven to 350°F.

Mix things up! Yeehaaa… yum yum… it’s Cowboy Cookies. Or, in this case, Cowgirl Cookies. A friend introduced these to me and I love them. Especially the name. Cowboy Cookies. But why stop there. They’re smooth Ball jars made especially for crafts. But which one should I give her? Oh and note to self: Use a ruler when attaching labels next time. Luckily, the first test batch I made, worked. So, here’s the recipe: Cowgirl Cookies 1 1/3 cup all purpose flour, spooned into measuring cup & leveled1 teaspoon baking powder1 teaspoon baking soda1/4 teaspoon salt1 cup cooking oats3/4 cup m&ms3/4 cup semi-sweet chocolate chips1/2 cup brown sugar, packed1/2 cup white sugar1/3 – 1/2 cup chopped pecans Stir all the dry ingredients in a large mixing bowl. Creamy Grilled Chicken Piccata A few weeks ago, I saw The Pioneer Woman make another lemon pasta dish and I immediately thought "Yuck! Lemon & Pasta sounds nasty!" BUT, I took a minute and thought about how much we love chicken piccata, so why not try a Creamy Chicken Piccata. The experiment paid off big time. Creamy Grilled Chicken Piccatainspired by The Pioneer Woman(Printable Recipe)Chicken Juice of 1 lemon (3Tbsp) 3 Tbsp olive oil 1 Tbsp minced garlic 1 tsp salt 1/4 tsp black pepper 1/2 tsp basil or oregano 2 boneless, skinless chicken breasts Pasta 2 cups dried penne pasta 2 Tbsp butter Juice of 2 lemons (6 Tbsp) 1 Tbsp minced garlic 1/2 cup half and half (or heavy cream) 2 tsp dried basil 2 Tbps capers 1/2 cup grated parmesan cheese Chicken Combine first 6 ingredients and mix well. Crock Pot - Buffalo (sauce) Shredded Chicken! (with pic) I seriously can't remember if I got this recipe on here or somewhere else, but I made it and it was damn good so I thought I would share. If it was on here and you want the credit, come on in and holla! Shredded Buffalo (sauce) Chicken in the crock pot 4 boneless skinless chicken breast 1 bottle of Franks Buffalo Sauce 1 Packet Hidden Valley Ranch Powder 2 Tablespoons Butter Throw the (frozen or thawed) chicken breast in the crock pot, top with 3/4 bottle of franks buffalo wing sauce, add packet of ranch powder. Cook on low for 6 hours. Serve however the hell you would like! In a hoagie, on top of salad, in your eggs, as a taco...the sky is the limit people! I served ours (because I had a lot of calories left to eat today) on a hoagie, with some shredded mozzarella and spinach!
