I have to admit, these Melton Mowbray-style pork pies aren’t just something you throw together, but for the serious pork pie enthusiast they are well worth the time and effort. To make them the old-fashioned way you’ll need an old-fashioned piece of equipment called a pie dolly plus some rendered leaf lard, for without good quality lard the side walls of the pie won’t stand up in the oven. Oh yes friends, these pies are baked free-standing, didn’t you know? Forms are for sissies. At least they are in Melton Mowbray. That said you absolutely can adapt this recipe to more conventional ingredients and equipment. On day one you’ll need to make your hot water dough and let it chill for at least four hours or overnight (which is better). When you’re ready to shape, make your filling. Pulse until the meat is chopped well, but no further. Produce your pie dolly and a round cutter (from a cutter set) that’s a bit larger than the circumference of the dolly. They look good to me! Cheers!

Homemade Soft Pretzel Bites Homemade Soft Pretzel Bites On Fridays, I teach cooking classes to two kids in our neighborhood. They are pretty knowledgeable-so my job is easy:) I think it is fantastic that they want to learn how to cook at such a young age-they are in the 3rd and 4th grade. Since we don’t have any kiddos yet, I am glad I get to work with these kids. We have a great time in the kitchen. On Friday we made homemade soft pretzels, the traditional salty ones and cinnamon and sugar pretzels. For fun, we also made pretzel bites. everyone loved these. Is everyone ready for the big game? Buffalo Hot Wings-these are Josh’s all time favorite. My good friend Gaby, from What’s Gaby Cooking, made Pulled Pork Sliders for the big game. Homemade Soft Pretzel Bites Yield: A lot!

Cinnamon Sugar Pull-Apart Bread I’m sorry. I know it’s Monday morning and you probably came here for some pretty pictures of food that you could glance at, and then move on with your day… and here I go thrusting warm, soft cinnamon sugar bread in your face. It’s not fair. You don’t deserve this sort of torture. This bread hits all the comfort spots in my soul. I’m sorry and you’re welcome and I love you. Let’s start at the beginning. I did this all without the use of a stand mixer and dough hook. This dough can be made and left to rise , then refrigerated overnight for use in the morning. This is the dough just before it’s left to rise. After the dough has rested and risen for an hour, I knead it in a few tablespoons of flour. This is the part in the bread process where you can wrap the dough and place it in the fridge to rest overnight. I worked with my dough right away. I can’t even deal. I sliced the dough, vertically, into six long strips. After 30 minutes in the oven… oh man…. bread heaven. Makes: one 9x5x3-inch loaf

tutorial.math.lamar.edu from lamar.edu frites & fries - Garlic Knots Most of my early food memories had to do with all the garlic dishes that my grandmother made. Preschool-me was so fascinated by the fact that Grandma smelled like garlic 24/7 and I was always so amazed that something so small could create so much flavor. My grandmother’s native Shangdong province uses a lot of garlic in their cooking so it wasn’t surprising to see my mom or my grandmother use up an entire bulb of garlic for a small dinner. Loving garlic is in my blood. When I make something with garlic in it, I tend to go nuts and use way more garlic cloves than necessary because I love using it. You don’t have to use the same amount of garlic I used in these garlic knots but here’s a rough guideline. Guide to Garlickyness (based on number of cloves used for these garlic knots): For 40-50 knots (adapted from White on Rice Couple): Dough: 1 ¾ c. water (about 115F)¼ c. olive oil1 tsp. sea salt1 tbsp. granulated sugar1 ½ tbsp. active dry yeast5 ½ c. all purpose flour Garlic Coating:

Upside Down Apple Pie If you consider yourself “pie crust challenged”, this recipe is your new best friend. I first saw this pie over at Lisa’s blog and I knew I had to give it a try, it looked delicious. While I have no problem making pie crust, so manypeople have had bad experiences making pie crust from scratch andhave just given up. It does take practice. This recipe was intriguing as it uses refrigerated pie crust. I normally do not like the texture of refrigerated pie crust as opposed to homemade but a homemade pie crust is unnecessary here. This pie is absolutely fantastic and after the hubby and I ate our share, we both agreed we prefer this apple pie to regular apple pie any day. We are just done with regular apple pie…can you believe it? Make this, make this, make this for Thanksgiving, you will save yourself a million hours and can concentrate on otherdesserts you want to serve. Coat a deep-dish pie plate with nonstick cooking spray and line it with parchment paper. Here’s a side shot.

Pepperoni Pizza Monkey Bread How do you make bread even better? You stuff it with pepperoni and cheese. Then, you bake it in a bundt pan that allows you to pull off little chunks and dip them in pizza sauce. This is the perfect thing to bring to a party (and I did, where it disappeared quickly!) This bread takes a little bit of time to prepare, but in about half an hour I had filled my bundt pan with little dough balls, each with a piece of pepperoni and cheese stuffed within it. My new definition of bliss: warm dough with a cheesy center and a bite of pepperoni. Pepperoni Pizza Monkey Breadfrom Confections of a Foodie BrideIngredients: -2 cloves garlic, thinly sliced -4 tbsp butter -2 lbs pizza dough (I used 2 balls of Trader Joe's fresh dough) -6 oz. mozzarella cheese, cut into small cubes (about 48 pieces) -pepperoni (about 48 slices) -2-3 cups marinara sauce for serving Directions: 1. 3. 4. How to Decorate Cookies with Royal Icing Welcome to the first in what I plan to be a recurring “How-To” series here on Brown Eyed Baker. While recipes are all well and good, there are some techniques that are best explained in a step-by-step method, with pictures included (at least this is how I learn best). As I was decorating my Stanley Cup Playoffs cookies last week I thought that doing a tutorial on how to decorate cookies with royal icing would be a great first How-To post. I was always very good at baking snowmen, Christmas trees, angels and the like in December, slapping on some buttercream, a few sprinkles and calling it a day. Step 1: Find a Good Sugar Cookie Recipe This might seem obvious, but not all sugar cookie recipes stand up well to heavy-duty decorating. Step 2: Cool Cookies Completely Again, maybe elementary, but we’re going step-by-step here. Step 3: The Equipment ♦ 12″ disposable pastry bags . ♦ Decorating tips . ♦ Couplers . ♦ Squeeze Bottles. ♦ Small bowls or Tupperware (to color your icing) ♦ Toothpicks.

How Sweet It Is Fried Ice Cream I'm sure you are thinking about Cinco de Mayo this very minute. You should be because it's in two days. We look for any excuse to celebrate. We look for any excuse to celebrate with food. I'd share a recipe for deep fried ice cream. This would be considered one of my "BIGS". You will need a good quality Vanilla ice cream, corn flakes, flaked coconut and cinnamon. I just happen to find New Simply Cinnamon Corn Flakes. You can, of course, use regular corn flakes. You will need to make 5 scoops of ice cream from a quart size container. Drop the scoops of ice cream onto a baking sheet lined with waxed paper. Let me tell you what you don't have time for...PICTURES. The ice cream melts too fast. Put the corn flakes in a plastic bag. Pound the corn flakes with a rolling pin or crush the corn flakes anyway you'd like...just crush them. Put the crushed corn flakes into a shallow bowl. Add 1 cup coconut. Add one tablespoon cinnamon. In shallow bowl add 2 eggs and 1 tablespoon milk. Fried Ice Cream 2 eggs
