Grease a muffin pan. Peel and core the apples. Dice them into small chunks until you’ve got about 1 to 1 1/2 cups. In a medium sized mixing bowl, combine 2 cups of flour, white sugar, baking powder, salt and cinnamon with a whisk. In a small bowl, combine the remaining 1/4 cup flour, the brown sugar and 1/4 cup butter. Whisk together the milk and eggs until well-blended. Very gently stir the liquid into the bowl of dry ingredients. Gently fold in the apples and walnuts. Sprinkle on a little more cinnamon. Serve warm and enjoy!

Cinnamon Sugar Pull-Apart Bread I’m sorry. I know it’s Monday morning and you probably came here for some pretty pictures of food that you could glance at, and then move on with your day… and here I go thrusting warm, soft cinnamon sugar bread in your face. It’s not fair. I know it’s not fair. You don’t deserve this sort of torture. This bread hits all the comfort spots in my soul. I’m sorry and you’re welcome and I love you. Let’s start at the beginning. I did this all without the use of a stand mixer and dough hook. This dough can be made and left to rise , then refrigerated overnight for use in the morning. This is the dough just before it’s left to rise. After the dough has rested and risen for an hour, I knead it in a few tablespoons of flour. This is the part in the bread process where you can wrap the dough and place it in the fridge to rest overnight. I worked with my dough right away. I can’t even deal. I sliced the dough, vertically, into six long strips. After 30 minutes in the oven… oh man…. bread heaven.

Strawberry Lemonade Cupcakes It happened again. I had one of my cupcake visions. And I couldn’t shake it. So I did. What’s odd about this is I don’t usually like lemon-flavored sweets. And you know what? I used a variation on the tropical cupcake base I’ve used previously, with all coconut milk rather than soymilk (I thought the coconut would play nicely with the lemon). Mint Chocolate Chip Cake Chocolate cake and I have had a very interesting romance. I started off with quite an intense dislike of chocolate cake. I KNOW. But try not to judge me too harshly, I had many bad experiences with store-bought dry, dense mudcakes covered in grainy baking chocolate icing. So every year when I asked Regex Man what cake he would like for his birthday and every year he replied me with "Chocolate So this year for Regex Man's birthday I offered to do a chocolate cake even though he said it didn't have to be chocolate this year. I used David Lebovitz's devil's food cake recipe again, my new favourite chocolate cake since making it for my raspberry cupcakes when I launched the new site.
