Et pour cause, ces prouesses datent du XIXe siècle et sont l’œuvre des quelques centaines de jardiniers-maraîchers parisiens qui assuraient alors l’autosuffisance de la capitale en légumes. Longtemps oubliés, ces savoir-faire sont aujourd’hui accessibles à tous à travers un manuel, publié en 1844 et récemment numérisé (merci au site Paysansansfrontieres.com de l’avoir partagé ici).
