I have always thought it’s bold to label a dish as “the best” or “perfect” because you set some really high expectations but I have no qualms about calling this the Perfect Apple Crisp because it was just that good. Just peel, core, and slice the apples. Sprinkle on some cinnamon sugar… Pile on the brown sugar and oats crumble…. If you aren’t good at pie crusts, try this for Thanksgiving instead of apple pie. This past weekend was my wonderful friend Robin's birthday (but don't tell her I've mentioned her again in my blog, she`s getting kind of a big head about it) and due to some various dietary restrictions in the group, I decided to make her cake gluten-free, dairy-free. Do not be concerned. This cake was so delicious that we devoured the leftovers the morning after her party like hungry sharks attacking their prey. Wet: 2 cups cooked quinoa 1/2 cup almond milk (or other alternative milk) 4 eggs 1 tsp vanilla 3/4 cup canola oil Dry: 1 1/2 cups sugar 1 cup unsweetened cocoa powder 1 Tbsp baking powder 1 tsp salt So, start by cooking you quinoa. This should make about 2 cups of cooked quinoa (it made a little extra for me so measure it out after it's cooked). In a separate bowl combine the dry ingredients. Then, you bake it in a bundt pan that allows you to pull off little chunks and dip them in pizza sauce. This is the perfect thing to bring to a party (and I did, where it disappeared quickly!) This bread takes a little bit of time to prepare, but in about half an hour I had filled my bundt pan with little dough balls, each with a piece of pepperoni and cheese stuffed within it. My new definition of bliss: warm dough with a cheesy center and a bite of pepperoni.
