a feel-good story. Happy Saturday! I hope everyone is enjoying a beautiful summer day like I am. I wanted to share a heart warming story my sister sent to me this week. We don’t know this person, but snopes verified as true. It is not known who replied, but there is a beautiful soul working in the dead letter office of the US postal service. Our 14 year old dog, Abbey, died last month. Dear God, Will you please take care of my dog? Love, Meredith We put the letter in an envelope with a picture of Abbey and Meredith and addressed it to God/Heaven. Yesterday, there was a package wrapped in gold paper on our front porch addressed, ‘To Meredith’ in an unfamiliar hand.. Dear Meredith, Abbey arrived safely in heaven. Having the picture was a big help. Thank you for the beautiful letter and thank your mother for helping you write it and sending it to me. Love, God

Raspberry Coconut Pops | Prevention RD Every popsicle recipe I read suggests straining out the seeds and pulp of various fruits, and…I just don’t get why. That’s the beauty of a REAL fruit pop, isn’t it? The health benefits of the soluble and insoluble fibers? Speaking of fiber. While strawberries and blueberries offer 4 grams of fiber per cup, raspberries and blackberries come in at DOUBLE the fiber content – 8 grams per cup! So, yeah…no straining here. Raspberry Coconut Pops 2 cups fresh or frozen raspberries 1/2 cup vanilla coconut milk 1/2 cup nonfat plain Greek yogurt 1/4 cup agave, honey, or maple syrup 1/4 cup unsweetened coconut flakes Directions: Combine ingredient in a food processor and blend until well combined. Distribute mixture into popsicle molds or dixie cups and popsicle sticks. Nutrition Information (per pop): 77 calories; 2.1 g. fat; 0 mg. cholesterol; 7 mg. sodium; 13.6 g. carbohydrate; 3 g. fiber; 1.8 g. protein Result: These were so refreshing and naturally sweet.
