So… I didn’t just make one outrageous cinnamon roll last weekend. I clearly made two. I think this is the end of the cake batter era. These are just as simple as the regular cinnamon rolls, and perhaps simpler than the cookie dough stuffed version. In all of this cake batter madness I’ve had going on lately, there is one thing I haven’t been able to master: the cake batter flavor without the actual cake mix! So these tasted just how they look – over the top. Holy sugar rush. Of course I find them wildly fun with all of the sprinkles going on. Mom’s Cinnamon Rolls (with Dulce de Leche) This morning is so cold! I can feel a draft in our apartment and my feet are not happy about it. The rest of me, however, is loving the sudden drastic change in the weather. My Minnesota-girl roots are thriving on what is reminiscent of a November morning at home. I was talking to my mom on iChat earlier about how much I miss my old bedroom. Sweetapolita Nutter Butter Peanut Butter Pie Nutter Butter- Peanut Butter Pie If you hadn’t heard already, our food blogging friend Jennie lost her husband Mikey last week. It was a sudden and unexpected loss. The kind of loss that is unfair in every way. In the midst of grieving for her lost love, she asked the world to make a peanut butter pie (Mikey’s favorite) and share it with someone they love. In response, the world made pies. So here’s my Peanut Butter Pie, my tribute to Mikey and love to Jennie and her family, that I was able to share with my own family. I went with a Nutter Butter crust. If you’re not familiar with Nutter Butters- they’re pretty much just like an Oreo… with peanut butter cookie and peanut butter cream filling. As much as we love Nutter Butters, they had to be smashed into bits for the crust. This is a no-bake, perfect-for-summer kind of pie. A nice layer of hot fudge is then spooned on top. Then it’s topped with the peanut butter cream filling… …and smoothed on top.

Pumpkin Cupcakes With Cinnamon Cream Cheese Frosting I couldn't believe my eyes this week when I saw the ad for Pumpkin Spice Lattes in my local Starbucks. Pumpkin Spice already? But there's still a little more summer to be had, isn't there? Of course, it was impossible to stay upset for too long; after all, this is lovely pumpkin -- one of my favorite flavors of all time -- that we're talking about! So, I ransacked my pumpkin-flavored recipes to find this one for Pumpkin Cupcakes. Coffee Cake. Literally. This is a yummy cake for coffee lovers ONLY, man. Just read the title. It’s not cake you eat with your morning coffee. It’s how you get your morning coffee. And it’s delicious! Well, you could have this cake with your coffee, I suppose. Translation: this is so, so yummy. Start with 2 cups all-purpose flour and 2 cups sugar in a bowl. Add 1/4 teaspoon salt. Stir it together… Until it’s well combined. Melt 2 sticks of butter in a pot over medium-low heat. While it’s melting, grab 3 tablespoons instant coffee crystals. You know you have some. And add it to 1 cup boiling water. Stir it together till it’s all dissolved. When the butter’s all melted, pour the liquid right into the pot. Let it come to a boil for about ten seconds, then turn off the heat. Now grab 1/2 cup buttermilk… And two eggs. Crack them into the buttermilk and add 2 teaspoons vanilla… And 1 teaspoon baking soda. Mix it all together with a fork until it’s well combined. Now, pour the butter/coffee mixture into the flour mixture. Sorry.
