Earlier in the week, I promised I was going to bake a cake for my blog. I lied. While I did make a cake, I certainly didn’t bake it. I microwaved it! When I posted my one minute peanut butter cake last month, I got a huge response! I took a little bit of flack last time for not including a warning about raw eggs (someone even asked if I was trying to kill people, sheesh). Caramel Apple Pie Cupcakes It seems like once the weather cools down everyone wants to jump right into pumpkin season. Don’t get me wrong, I love pumpkin as much as anyone else, but to me September is apple season. I was thinking about how often apples get overshadowed by pumpkin a few weeks ago when my husband asked me if I wanted to attend a dinner party with some of his coworkers. “Hrmmm. Maybe…”, I said. “They asked us to bring some kind of food to share”, he said. It took me a while to decide on an approach for these cupcakes. Ultimately, I decided the best way to pack that punch of apple flavor into a cupcake was to use apple pie filling. I was apprehensive while putting these cupcakes together. In the end, they didn’t. They tasted approximately a million times better than I had imagined. I was hoping for good cupcakes, but these were amazing. Chocolate Peanut Butter Brownie Bites What defines a cupcake? Is it the shape? The texture? The frosting? Because while these might look like mini-cupcakes, I don’t think I’d consider them cupcakes. They are brownies, through and through. But these, cupcake or not, are delicious. Based off of the delicious and oh-so-decadent Crunchy Peanut Butter and Fudge Brownies, but instead of one big pan of brownies, I went the bite sized route and made them in mini muffin tins. Homemade Nutella Many years ago I worked in a restaurant in New York with a group of other cooks, who were mostly women and we were all friends. We’d gather in the cold morning kitchen, working around a communal wooden counter near the warm stove armed with cups of strong coffee as we set about our various tasks while engaging in conversations while doing all the repetitive work of chopping the piles of vegetables we used for soups, salads, and other things that we were going to prepare the rest of the day. One woman, who I’ll call Mary Smith (and who, for some reason, we all called her by her complete name, “Mary Smith”, rather than just “Mary”), was bookish and almost librarian in her demeanor, and she was attending a local Ivy league institution, getting her doctorate in Russian and Russian studies. She worked very efficiently with no unnecessary movements, and always had perfect posture, like a ballerina, along with pristine skin and straight brown hair pulled sharply back in a tight ponytail.

Easter is also right around the corner and my kids are counting down the days for the Easter Bunny! I couldn’t wait to try this recipe I created, so Easter came a little early in the treat department at our house! But before I get to more about the recipe, I have an announcement. Ok, back to the recipe….I’ve been running across a lot of different truffle recipes lately. The dough doesn’t take many ingredients and comes together quite easily. In the meantime melt some of your favorite chocolate or candy melts. Once the chocolate/melts are smooth, get ready to dip. Let the chocolate run off the truffles for a few seconds then place the truffle back on the lined baking sheets. After you dip the truffles place them back in the fridge for a few minutes for the chocolate to set. Once the chocolate is set you can drizzle more chocolate on top of the candies using a fork.
