Roasted carrot and cauliflower soup | Flavour Fiesta! January can be a rather dull month since the holiday festivities are over and it’s the dead of winter. The best way to brighten things up on a cold, dreary day is with some colourful comfort food. Personally, I love the thought of warming up with some vegetable soup on a weeknight since it doesn’t require much work and you’ll get a few servings of veggies too. We all know how hard that is! This bright orange soup is made with roasted carrots and cauliflower, but since plain vegetable soup can get a little boring sometimes, I took some inspiration from the East. The soup also includes fresh ginger and coconut milk! Whenever I make soup, I usually just boil the vegetables in the pot and blend them once they have softened. Line a baking sheet with parchment paper. In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until light and fluffy (2-3 minutes). In a separate bowl, whisk together the flour, baking powder, salt, and cocoa powder. Transfer the dough to a floured surface and divide it in half. Chocolate Hazelnut Torte Recipe To toast nuts: Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Place the hazelnuts on a baking sheet and bake for about 15 minutes or until nuts are brown and fragrant and the skins are starting to peel away from the nuts. Remove from oven and place the nuts in a clean dish towel. To make ground hazelnuts: Once the hazelnuts have completely cooled, place in a food processor, along with the flour and salt, and process until hazelnuts are finely ground. To make Torte: Increase the oven temperature to 375 degrees F (190 degrees C). Separate the eggs while they are still cold, placing the yolks in one bowl and the whites in another. Meanwhile, in a heatproof bowl, over a saucepan of simmering water, melt the chocolate and butter. In the bowl of your electric mixer, or with a hand mixer, beat the egg yolks with 1/2 cup (100 grams) sugar until pale and thick (about 3 - 5 minutes). Cool the torte completely in the pan on a wire rack. Serves 10 - 12.
Almond Biscotti Recipe Almond Biscotti: Preheat oven to 350 degrees F (180 degrees C). Place the almonds on a baking sheet and bake for 8-10 minutes or until very lightly brown and fragrant. Let cool and then chop coarsely. Reduce oven temperature to 300 degrees F (150 degrees C) and line a baking sheet with parchment paper. In a small bowl whisk the eggs with the vanilla and almond extracts. In a large bowl whisk the flour with the sugar, baking powder and salt. Transfer logs to a cutting board and, using a sharp knife, cut logs into slices about 1/4 - 1/2 inch (6-12 mm) thick on the diagonal. For Chocolate Dipped Biscotti: Place 4 ounces (120 grams) of the finely chopped chocolate in a heatproof bowl and place it over a saucepan of simmering water. Makes about 40 biscotti. Scrape down the sides of the bowl. Place the dough on your counter and, using your hands, evenly form the dough into a log shape that is about 9 inches (23 cm) long. Preheat the oven to 350 degrees F (177 degrees C) and place the oven rack in the center of the oven. Using a sharp knife, slice the log into about 1/4 inch (6 mm) thick wafers. Some foods I love in their raw state -- carrots, berries, and cabbage, among others -- but not when they're cooked. Maybe it's a texture thing. This red cabbage salad falls somewhere in between raw and cooked. Red cabbage salad with walnuts, raisins, feta and warm mustard dressing From the pantry, you'll need: extra virgin olive oil, red wine vinegar, Dijon mustard, walnuts, feta cheese, raisins. Serves 4-6. Ingredients 4 cups thinly shredded red cabbage (half of a large head)1/2 cup walnut halves1/4 cup extra virgin olive oil1/4 cup red wine vinegar2 tsp grainy Dijon mustard1/4 tsp fresh black pepper1/4 cup crumbled feta cheese1/4 cup golden raisins Directions Place the cabbage in a mixing bowl and set aside. In a dry frying pan, toast the walnuts over low-medium heat until they are aromatic and just starting to brown. Add to the walnuts the olive oil, wine vinegar, mustard and black pepper.
