Millet Salad with Meyer Lemon Vinaigrette & The Whole Kitchen In the blur of the last two weeks of dog sadness and new-hound hope, I almost forgot that this was a food blog. You’ve all been so kind with your words of sympathy and now excitement for our soon-to-be hound, Miracle, you’ve made this transition in our lives easier to bear with your outpouring of support. We’re counting down to Sunday when Miracle joins the family. Sunday morning, we had a brunch potluck with our friends…it was our holiday gathering, just not over the holidays. I came up with this dish using odds & ends from our CSA and my new favorite grain, millet. Have you given millet a try yet? Lemony Millet Salad Serves 6-8 as a main dish Millet: 1 cup millet 3/4 cup white wine 1 1/2 cup water 3/4 tsp salt 1 tsp dried thyme 1/2 tsp ground black pepper 1/4 cup minced parsley for garnish. At best I could dig the foil out of the trash for you that enveloped this loaf for a full 13 minutes before complete domination took over. See, bread if my favorite thing to make. While I don't stray from my favorite guacamole recipe often, this one has a nice smokiness to it that's a great fit for fajitas or anything grilled. I suggest a really bright white wine, one with lots of minerals. Oreo Truffles Dusted in Cocoa Powder | The Food Addicts I don’t know about you guys, but Oreos are one of my favorite cookies. I love dunking them in milk and sometimes crave the Oreo McFlurry from McDonalds. Oreos are indeed versatile because they can be eaten in so many different ways. A fun way to use up Oreo cookies that I recently discovered is to make little truffles out of them. This is not only fun, but it’s super easy. For this recipe, I used only half a package of Oreos because that's all I had left. Put the oreos in a mixer along with 4 oz. of cream cheese (half a package). To make the texture more gooey and moist, I added 4 tbsp of water to the mixture. The mixture is placed in the freezer to harden for a bit before I rolled them into 1-inch balls. Take each ball and roll it around in cocoa powder so it's fully dusted and you can't see the blacks of the oreo underneath. Some people like to dip the oreo balls into melted chocolate or candy melt. Have fun making your Oreo Truffles Dusted in Cocoa Powder!

Spiced Zucchini Cupcakes with Cinnamon Cream Cheese Frosting | Tasty... Preheat the oven to 350 degrees F. Prepare two 12-count muffin tins with cupcake liners or baking spray. In a mixer, combine the oil and sugar until well mixed. Add the three eggs and beat on medium-high until light and fluffy, about 2 minutes. Meanwhile, combine all of the dry ingredients (all of the remaining cupcake ingredients except the zucchini) in a separate bowl. Add the dry ingredients to the mixer and combine to make a thick batter. Add the shredded zucchini to the batter and stir until the batter is uniform. Spoon the batter into the muffin tins and fill them to about ¾ full. Bake the cupcakes for 15 minutes or until just golden brown on top and a toothpick stuck in the middle comes out clean. Let the cupcakes cool in the pan before transferring them to a cooling rack to finish cooling. Make the frosting while the cupcakes are cooling. In a mixer, whip together the soft butter and cream cheese. Add the powdered sugar, cinnamon and the milk. Whip everything to a light, fluffy frosting.

Not any more. My wife found this recipe, and it’s perfect. I’m done looking. This is the brownie recipe that I’ll use from now on. Ingredients 1½ cups sugar ¾ cup flour ¾ cup cocoa powder (see note below) 3 eggs ¾ cup butter, melted ½ teaspoon salt (if using unsalted butter) ¾ cup semi-sweet chocolate chips (see note below) Directions A NOTE ON CHOCOLATE: You’ll notice the list of ingredients is very short. The assembly is about as easy as you can get. Do this by hand, until the dry ingredients are just incorporated into the wet, and stop. Stir in the chocolate chips. Line a 9×13 baking dish with parchment. Pour the batter and spread it out. Bake at 325° for 20-30 minutes. Very carefully lift the parchment out of the baking dish.
