Blueberry Meyer Lemon Muffins with Streusel Crumb Topping What’s the secret to a good muffin? Lumps. It’s crucial to leave a few lumps in the muffin batter, or in other words, to refrain from overstirring. The problem is that with each stir, you develop gluten. Gluten development is great for bread or pasta, but too much gluten isn’t good for cakes, muffins, or other baked goods because it makes them tough. As long as you stir appropriately, you will be rewarded with some killer muffins. Grace very kindly gifted me with a new carbon steel wok, which we seasoned and prepped for cooking. So, take the word of a (now converted) wok-aholic — this tool and this method of cooking are very much worth knowing, especially if you want to teach yourself to get fast, healthy weeknight dinners on the table. Unfortunately, it's not available everywhere, but don't fret, you can make it at home, here are a couple recipes for making your own. ... Crusty Bread Jan. 1, 2015: Just released. Crusty Bread 3 cups unbleached all purpose flour 1 3/4 teaspoons Kosher salt 1/2 teaspoon Instant or Rapid-rise yeast 1 1/2 cups water In a large mixing bowl, whisk together flour, salt and yeast. I must begin by saying where the recipe originated, if in fact it originated anywhere...really. Remember before beginning to create, that this bread is highly forgiving. You do NOT have to have an enamel covered cast iron pot. You DO NOT need to oil the pot. In a large mixing bowl add 3 cups white unbleached flour. To the flour add 1 3/4 teaspoon salt (I use kosher I like it) and 1/2 teaspoon rapid rise or instant yeast. Whisk the flour, salt and yeast together. Add 1 1/2 cups water. Mix in the water. That's it! Cover the bowl with plastic wrap and let it set for 12 - 18 hours on the counter top. After 12 hours the dough will look like this. Meet my blue Le Creuset. Now, please disregard that this dough has stuff in it.

Popsicles! | Bounteous 90 degree days have arrived and it has been MISERABLE in my house. We have a window AC unit but need to repair the broken, lead-paint covered windows in the bedroom and dining room before we can use it. The window has been ordered and deposit paid to the contractor. Until it is installed, however, we are getting creative on ways to keep cool! Some friends of ours who somehow survived living in Arizona without air conditioning had a genius suggestion: homemade popsicles! Strawberry-Kiwi Courtesy of Fine Cooking’s amazing make-your-own-ice pop recipe generator Makes 8-10 popsicles 1/2 cup granulated sugar Pinch salt About 10 kiwis (or 1.5 pounds) 1 cup strawberries, sliced or quartered or whatever Make a simple syrup: mix the sugar, salt and a half cup of water in a saucepan and bring to a boil. While simple syrup is cooling, peel kiwis and puree flesh with a food processor. Combine kiwi puree, strawberries and simple syrup. Strawberry-Rhubarb Pie Makes 3-5 popsicles (can be doubled)

HINT: Rolling Out Dough Without the Mess Rather than wait for your cookie dough to chill, take the freshly made dough and place a glob between two sheets of parchment paper.Roll it out to the desired thickness then place the dough and paper on a cookie sheet and pop it into the refrigerator.Continue rolling out your dough between sheets of paper until you have used it all. Slow Cooker Chicken Taco Meat {from Dina} Dina W shared her favorite chicken taco meat recipe on Facebook… “Chicken breast + taco seasoning + ranch dressing seasoning + rotel = BEST chicken taco meat ever! Homemade seasonings of course!” Update from Dina… 3-4 frozen chicken breast in the bottom of the slow cooker. 10 oz can Rotel diced tomatoes with green chilies (not drained) 2-3 T of Ranch Dressing 2-3 T of Taco Seasoning Both just liberally sprinkled on top.
