Hearty English Recipe: Cottage Pie Hearty English Recipe: Cottage Pie For a fairly simple dish, look no further than the rustic roots of the United Kingdom. Cottage pie (also known as shepherd's pie when the meat is lamb) is a traditional dish cooked by shepherds and farmers. Because lamb has fallen out of the American palette, most modern cottage pies are made with ground beef. We added in a few additional seasonings to really make the flavors pop in this dish. Keep in mind, this dish is a meal on its own. Cottage Pie Recipe (makes 4 servings) Ingredients 1 1/2lbs lean ground beef1 onion, chopped1/3 cup chopped carrots1/2 cup corn1/3 cup peas1 1/2lbs to 2lbs potatoes.8 tablespoons butter1/2 cup beef broth2 teaspoons Worcestershire sauce2 sprigs fresh thyme1 teaspoon dried rosemary2 teaspoons cornstarch1 clove garlic, minced1/2 cup shredded cheddar cheese Directions Preheat the oven to 400FPeel and quarter the potatoes. twice-baked potatoes with kale As I do every year, I woke up the morning after Thanksgiving with dueling urges to consume pie for breakfast as well as to repent with an endless sequence of brothy vegetable soups until I no longer dreamed of pumpkin cheesecake, cranberry caramel almond tarts and chocolate silk. I vowed make the wholesome side triumph this year, however, yet somewhere along my righteous path to eating kale salad for breakfast, lunch and dinner, I remembered that kale salad tastes absolutely nothing like pie and that was basically the end of that. By dinner that night, we were digging into terrifying heaps of spaghetti and meatballs at Carmine’s, followed by overstuffed chocolate cannolis. There wasn’t a ribbon of kale in sight. The inspiration came from a version on Food52 created by the blogger behind Brussels Sprouts for Breakfast who had served these, I think rather brilliantly, as a side to her family’s surf-and-turf Christmas Eve tradition. Serves 6 as a side; 3 as a hearty main

Grilled Pesto Shrimp Skewers Homemade pesto with basil from my garden makes a scrumptious addition to shrimp. Serve these for dinner or make them at your next BBQ! These are EASY, and now that it's grilling season I am sharing them from the archives. Inspired by a dish served at my sister in laws garden baby shower (pictured below), this is so simple and delicious, I knew I had to make them myself. They served them on a platter over a bed of greens, but this is also great served as skewers so you can hold them in your hand. These have been making a regular appearance at my house since I first posted the recipe. Note: Keep in mind that when you remove the shell from the shrimp it will weigh less, so I started with about 2 lbs of shrimp to get 1 1/2 lbs after I peel them. Cheese Ravioli with Lemon Basil Butter Sauce Cheese Ravioli with Lemon Basil Butter Sauce Cheese Ravioli with Lemon Basil Butter Sauce-this fresh and tasty recipe takes less than 30 minutes to make and is always a hit! We are always trying to come up with quick and easy dinner recipes. We love sitting down at the dinner table as a family, but sometimes it is hard. Our new favorite quick and easy recipe is Cheese Ravioli with Lemon Basil Butter Sauce. We didn’t make the ravioli from scratch because we are focusing on quick and easy. And I promise you, once you pour the lemon basil butter sauce over the ravioli, it will taste homemade. To make the lemon basil butter sauce, we used two Land O Lakes® Butter with Olive Oil & Sea Salt Half Sticks. Once the butter was melted, we added shallot, lemon zest, fresh lemon juice, and basil. We drizzled the lemon basil butter sauce over the cheese ravioli and sprinkled fresh Parmesan cheese and a little more basil for garnish.

5-Ingredient Zucchini Fritters Recipe Step aside, zucchini noodles. There is a new fan favorite in my house for the best way to put the summer zucchini surplus to use, and it comes in the form of zucchini fritters. Best of all, you only need five ingredients and 25 minutes to go from everyday veggie to all-star appetizer, side dish or snack. The setup is simple: Grated zucchini joins forces with sliced scallions, flour and eggs. Patties are formed and pan-fried then served hot alongside a refreshing dollop of sour cream. These fritters-slash-pancakes (inspired by their culinary cousin, Leftover Mashed Potato Pancakes) make any topping or dunkable sauce fair game, from roasted garlic aioli to tahini yogurt dip. 5-Minute Quinoa Recipes By What To Eat Published Sep 16, 2014 Today’s guest blogger is Food Network star Melissa d’Arabian, who joins Recipe Rehab and Everyday Health for the Brown Bag Challenge! Quinoa is a little like kale — it raced into our lives with flourish and fanfare, and we went from not being able to pronounce quinoa to it being available at even small neighborhood grocery stores. Still, there are too many of us who haven’t even tried quinoa, and even the early adopters have barely scratched the surface in terms of its versatility. What’s so great about quinoa? Here’s the plan: Make a large batch of plain quinoa and then keep it in the fridge, cooked and ready to go for super easy recipes all week (because if brown-bagging is a huge hassle, you might give up after a day or two, which I don’t want!). Now that you have your quinoa ready to go, you are less than five minutes away from any of the following portable lunch ideas:
