The Best Chocolate Mousse of Your Life Under 5 Minutes : Cafe Fernando – Food Blog - chocolate mousse recipe - herve this - Chocolate December 22nd, 2010 | Category: Chocolate Two ingredients (seriously, only chocolate and water) and five minutes later, you will be eating The Best Chocolate Mousse of Your Life. I promise. And you don’t even need any fancy kitchen gadgets. Patience and a bit of elbow grease are required, but we always need those in the kitchen, right? This amazing discovery was made by the famous French chemist, Hervé This, who is also known as the man who unboiled an egg. Since the recipe has only two ingredients, it all comes down to the quality of the chocolate you use. Don’t take this as a mousse recipe only. You can also flavor it with spices like cinnamon or cayenne pepper or add a tablespoon of liquor like Grand Marnier, Chartreuse or Tia Maria. Or boil the water first, take off heat, place a couple of Earl Grey tea bags, let infuse and then use it as your liquid. The most important part of the recipe is achieving the right consistency. Wishing everyone a Merry Christmas and a Happy New Year!

The key to preventing moldy berries? Vinegar! - Food Lush by Katie Berries, particularly super-fresh berries, are just wonderful, aren't they? Spicy, Lime-y, Cilantro-y, Chunky Guacamole | I looked in my refrigerator yesterday and freaked out over all the container-filled left over foods. Usually that’s a good thing right? Most people probably wouldn’t get stressed out over left overs. I had a lot of cilantro from over the weekend that I didn’t know what to do with. Just a side note, do you remember how expensive avocados were about a decade ago or more? So getting back to my original post, I love my guacamole extra lime-y. Spicy, lime-y, cilantro-y, and chunky guacamole 4 avocados 2 roma tomatoes, seeded and diced 1/2 red onion, minced or finely diced (about 1/2 cup) 1/3 cup cilantro, chopped 3 limes, juiced 2 jalapenos, minced (remove the seeds and pith if you don’t like it spicy) 1 teaspoon salt Cut avocados in half, and remove seed. Using a fork or potato masher, mash the avocado, while leaving it chunky. Chili peppers vary individually in their hotness, even with the seeds and pith removed. Enjoy immediately with your favorite tortilla chips. Makes 4 to 6 servings.

Pop-Tarts Yeah. I went to culinary school. I trained in classic French technique. I can temper chocolate, laminate dough, pipe rows of perfect macarons, and make breads with my own wild-caught yeast. But my highest achievement? So understand me. Tart Dough 10 ounces all purpose flour (see note below for my gluten free flour blend) 1 tsp kosher salt 8 ounces cold butter, cubed (use shortening for vegan) 6 ounces corn syrup 1 batch of the Pop-Tart filling of your choice (jam will not work!) Icing 12 ounces powdered sugar 2 egg whites (use corn syrup for vegan) 1/2 tsp salt 2 tsp vanilla 1 batch of homemade rainbow sprinkles, or store bought Making the Tart Dough If you would like to make these gluten free, use 8 ounce rice flour, 1 ounce kinako, and 1 ounce buckwheat flour. Cut the butter into the flour, along with the salt, until reduced to pea sized lumps. Flatten the dough into a squarish shape, wrap in plastic, and chill 30 minutes or as long as you like. Rolling out the dough Okay, listen up. Hi!

Steak au Poivre - The Showstopper I have a comment on this comment, then I have a comment for the OP. To Amy: Removing to foil is simply a way to keep the steaks warm whilst resting (FOR 5 MINUTES AT LEAST… ALWAYYYS!). When the OP says remove to foil, he/she doesn’t mean to wrap them tightly. To the OP and to anyone else who decides to try ‘flambe’: It is important to note: When you add cognac or any other high proof liquour to a hot pan, then ignite, you are not burning the alcohol itself, per se. - Never light alcohol while there is an open flame/heat source. - Notice how in the OP, they remove the pan from the stove and then light. - Keep a heavy lidded pan nearby, just in case things Do go awry (if you follow the first 2 tips, they won’t) - Always have at least an ABC rated fire extinguisher within arm’s reach I would like to add on a personal note, I LOVE steak au poivre. As far as the recipe goes, I would recommend spooning off all but a tablespoon of fat from the pan, before deglazing with the cognac.

How to photograph steam | What's Cooking Mexico I love corn on the cob. In the fairs and street markets in Mexico I would always eat elotes con mayonesa y queso, a classic street food down there. When you walk down the street and see a long line in front of lady (usually) standing next to a big steamer and a table with containers of mayonnaise, cheese and chili powder, then that’s the place to get your elotes. Last summer I wanted to recreate that delicious street food from my memories, but when I was getting the ingredients ready I wondered how the mayo would turn out if I spiced it up a little. For a while I have been wanting to post this simple tip to make spicy mayonnaise. First you need to realize that it would be almost impossible to photograph steamy food. Somethings to keep in mind: The bigger the clothe the more steam you will get, but the more difficult it would be to hide it behind your food. ¡Buen provecho!
