Yesterday was busy with swimming, BBQing, and relaxing. My Laundry Monday turned into Laundry Tuesday topped with an additional load of damp swimming towels. Being the good parents we are we counted swimming as baths for the kids and sent them to bed smelling of sunblock. Then as I snuggled on the couch to write a post about these cookies I brought to our BBQ I just…could not…keep…my eyes…open. These S’mores Cookies are a perfect hello to summer. These cookies have a graham cracker base with a chocolate chip cookie sprinkled with chocolate and marshmallows topping it. Ingredients 11 Tablespoons unsalted butter, softened 1 cup brown sugar, packed ½ cup granulated sugar 2 large eggs 1 teaspoon vanilla 1 teaspoon baking soda ½ teaspoon sea salt (optional) 1 teaspoon cinnamon 2 ½ cups flour 1/2 cup semi-sweet chocolate chips 1 cup mini marshmallows 3 regular sized Hershey’s bars, broken into pieces 1-2 packages graham crackers, broken into squares Instructions Notes

Mini Funnel Cakes.. A few weeks ago, I shared with you one of my favorite treats from the State Fair of Texas, Deep Fried Cookie Dough, well here is another of my favorite fair foods… As you can probably guess from the title and the picture it is funnel cake! Only this funnel cake is in a much friendlier portion size. The cake is the size of the plate and you feel sick if you eat one by yourself (not that I would know from experience or anything) I decided that I wanted to make funnel cakes that were a more manageable size. Traditional funnel cakes are made by filling a funnel with batter and then moving that funnel over hot oil in circular criss crossing motions to make the iconic funnel cake shape. As you can see, the principle is still the same, only with using a smaller bottle you have more control over your cake’s shape. Sugar Cookie Squares with White Chocolate Raspberry Cheesecake Frosting I just can’t get enough of the sugar cookie squares! Yesterday I was making the original Sugar Cookie Squares with Vanilla Frosting and was thinking of what other combinations would be good with these squares. The best that came to mind, these Sugar Cookie Squares frosted with decadent White Chocolate Raspberry Cheesecake Frosting. They basically melt in your mouth while the combinations of sweet yet tangy cream cheese with natural berry goodness tantalize your taste buds. Also, this frosting would be incredible on a vanilla, chocolate or angel food cake, just keep in mind it has a slightly runnier consistency than your average butter cream frosting so it not ideal for piping. But, as we quickly learned, there are two schools of thought when it comes to making funnel cakes. The different schools of thought deal with egg content and the application of heat to the batter. Then there a large handful of recipes that made the consistency of a weak pancake batter that seemed to be the exact opposite end of the spectrum. Homemade Oreos Lately, my husband has been getting me into a bit of trouble. You see, he’s my taste tester. He’s not afraid to tell me when something I make is awful (it has happened before… believe me!), so I know he’ll give me an honest opinion.
