makes about 18 1 cup water 5 extra large eggs 1/2 cup unsalted butter 1 cups gruyere cheese shredded 1/2 cup scallions- sliced thin- white and light green part 1 cup unbleached flour, sifted 1 t kosher salt shredded gruyere for topping Preheat oven to 425 degrees . Stir in 4 eggs one at a time, making sure the first egg is fully incorporated before adding the next. Line a shallow baking sheet with parchment paper or a Silpat liner . Beat the remaining egg with a teaspoon of water in a small bowl. Homemade Tortillas Making soft delicious tortillas at home is surprisingly easy. In fact, once I started making my own suddenly all our dinners and lunches were rolled up in fresh tortillas. The dough is made from flour, shortening, water, and salt. I had all the ingredients on hand but the shortening.. which ended up only costing two dollars and has lasted through many many batches of tortillas. Considering how cheap the ingredients are and how delicious they taste it just doesn't make sense to pay for the much more expensive packaged ones. To make the dough you first work the shortening into the flour. Next some hot tap water and salt is stirred in with a fork until a dough forms. To make sure that the tortillas are the same size the easiest thing to do is roll the dough into a log and then cut it into equal pieces. Easy Brazilian Cheese Bread (Pão de Queijo) Recipe Print Our tour of Brazil continues. After posting the moqueca recipe, several of you asked if I had a recipe for Pão de Queijo, or Brazilian cheese bread, sort of like a chewy cheese puff made with tapioca flour. As a matter of fact, I do. My friend Bill gave me this recipe years ago, a favorite from his Brazilian wife Silvia. I’ve made it several times, each time with different cheeses. There are several ways to make Pão de Queijo. The beauty of this recipe is that you can make a big batch of batter and just store it in the refrigerator (for up to a week), pouring out just as many mini-muffins as you want to eat. The only weird ingredient is tapioca flour. The recipe as presented is fairly basic. Ingredients Special equipment recommended: One or two mini muffin tins. *It helps when baking with eggs to start with eggs at room temperature. Method Hide Photos 1 Preheat oven to 400°F. 2 Put all of the ingredients into a blender and pulse until smooth. Eat while warm or save to reheat later.

Parmesan Mashed Cauliflower Don’t let anyone fool you, mashed cauliflower on its own always tastes a bit wet and cabbagey. And gritty. I understand why people make it, I do. It’s mock mashed potatoes… faux-tatoes for a fraction of the calories. Cauliflower is super healthy, low calorie, and can be pretty darn delicious as a side, cozied up next to meatloaf, or tucked under stroganoff. But it doesn’t have that same silkiness, that same smooth fluffiness that a mashed potato does. In an effort to make something light and lovely texture-wise, I combined the two. Here’s how they’re made: Parmesan Mashed Cauliflower serves 4 1 head cauliflower, cut into florets, trimmed of as much of the stems as possible 1 large russet potato, peeled and cut into 1″ cubes 1/4 cup full-fat sour cream 3 tablespoons grated Parmesan cheese 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper Fill a large pot with about an inch and a half of water. Spaghetti Pie This is not what you think it is! Or maybe it is. I like to serve food buffet-style. It’s such a relaxed and informal way of eating during holidays or other get-togethers. Especially food you can make ahead of time and simply pop in the oven at the moment supreme is a big hit in my kitchen. This spaghetti ‘pie’ is one those slightly unorthodox recipes I like so much. It’s best eaten cold or lukewarm, so you can make it in advance. It’s also a great dish for people who are not into potatoes—yes, they really do exist. Ingredients: 10 oz spaghetti 7 oz cheese 2 bell peppers 1 large onion 1 large carrot 2 spring onions 2 tomatoes 4 eggs 1 tsp lawry’s seasoned salt 2 tbsp breadcrumbs 1 tbsp parmesan 1 tbsp parsley 1 tsp basil pepper cayenne Directions: As always, I start by peeling and finely chopping my carrot.
