I am in love with chocolate chip cookies. Some people say they’re boring but give me a plate of still warm chocolate chip cookies and a glass of Cruze Farm milk, a good book and a comfy chair and I’m in my own personal Shangri-La. Don’t get me wrong – I’d never turn down a homemade cookie of any kind (although no walnuts please!) but chocolate chip cookies are the best of both my cravings. You get the buttery, rich cookie bits, the melty, transcendent chocolate bits and both tastes in one bite if you so choose. As a kid, my Mom quickly learned that if any cookies were going to make it to whatever function she was bringing them to, she better make a triple batch and hide them well. I’ve tried a lot of chocolate cookies in my day and I’ve eaten a lot of lousy ones. A few months ago, Marcus and I discovered an amazing recipe in Cooks Illustrated. Bacon has also been getting a lot of attention lately, especially when used as an ingredient in something unusual, like a sweet or dessert.

The characteristics of the perfect cookie are a very personal matter, and here are my preferences: texture: chewy w. medium thickness --- everyone has their preference, and this is mine! chocolate to cookie ratio: 50/50 --- I really enjoy having a lot of chocolate in every bite chips vs. chunks: chunks --- I like sizeable pieces of chocolate in my cookie. type of chocolate: bittersweet --- I like using Valrhona 61% extra bitter nuts or other add-ins: NONE!! With the above criteria in mind, this recipe is the closest I've come to experiencing CCC perfection. - Don't substitute the pastry and bread flours w. - Hand chopped chocolate chunks, NOT premade chips - I will purchase a hunk of the best bittersweet chocolate that I can afford and hand cut them into chunks. - Chill the cookie dough at least 24 hours (I let my dough sit anywhere from 2-3 days) before baking.

Slow-Cooker Jambalaya I inherited a love of Cajun food from my Dad. Not that he is at all Cajun. He just likes the food. New Orleans is one of my parents' favorite destination spots, and they've vacationed there several times. I've never been, but maybe someday.
