Every popsicle recipe I read suggests straining out the seeds and pulp of various fruits, and…I just don’t get why. That’s the beauty of a REAL fruit pop, isn’t it? The health benefits of the soluble and insoluble fibers? Speaking of fiber. While strawberries and blueberries offer 4 grams of fiber per cup, raspberries and blackberries come in at DOUBLE the fiber content – 8 grams per cup! So, yeah…no straining here. Raspberry Coconut Pops 2 cups fresh or frozen raspberries 1/2 cup vanilla coconut milk 1/2 cup nonfat plain Greek yogurt 1/4 cup agave, honey, or maple syrup 1/4 cup unsweetened coconut flakes Directions: Combine ingredient in a food processor and blend until well combined. Distribute mixture into popsicle molds or dixie cups and popsicle sticks. Nutrition Information (per pop): 77 calories; 2.1 g. fat; 0 mg. cholesterol; 7 mg. sodium; 13.6 g. carbohydrate; 3 g. fiber; 1.8 g. protein Result: These were so refreshing and naturally sweet. Happy Saturday! I hope everyone is enjoying a beautiful summer day like I am. I wanted to share a heart warming story my sister sent to me this week. We don’t know this person, but snopes verified as true. It is not known who replied, but there is a beautiful soul working in the dead letter office of the US postal service. Our 14 year old dog, Abbey, died last month. Dear God, Will you please take care of my dog? Love, Meredith We put the letter in an envelope with a picture of Abbey and Meredith and addressed it to God/Heaven. Yesterday, there was a package wrapped in gold paper on our front porch addressed, ‘To Meredith’ in an unfamiliar hand.. Dear Meredith, Abbey arrived safely in heaven. Having the picture was a big help. Thank you for the beautiful letter and thank your mother for helping you write it and sending it to me. Love, God

Music diversity will grow. The major labels' business model requires them to have a steady stream of consistent products. The very nature of their operation produces homogenized music designed for specific radio formats and scientifically honed to hit-making models. Artists are signed and promoted based on the opinions of individual A&R executives, not the popularity of the music. When the major labels crumble, the diversity of mainstream music will blossom. Pay-for-play radio will end. For decades, the major labels have controlled what's on the radio by paying radio stations to play their songs. Legislative efforts to end the practice have failed consistently. Independent music won't be marginalized. The major labels use their monopoly of distribution and their control of radio to prevent independent music from competing in the mainstream. The lawsuits will stop. The major labels hit a new low when they started suing fans this fall. Artistic freedom will expand.

This is part III in a mini-series of Harry Potter snacks from the books brought to life (part I is on Honeydukes treats, part II is all about the cauldron cakes, and part IV showcases decadent butterbeer cupcakes). Last August, my family made the two thousand mile journey to the Wizarding World of Harry Potter at Universal Studios. Orlando has always been one of my family's favorite vacation destinations. Add in my love (and obsession) with Harry Potter and we all knew that once the park officially opened I couldn't be kept away for long. On the big day, we woke up at an obscene hour to a bright dawn. This was my moment. When I entered the park, I was immediately swept away by the architecture and the detail. I'm pretty sure I had a grin on my face a mile wide. Believe it or not, "window shopping" was one of my favorite sights in the park. Cauldron shops, music stores, clothing boutiques—I just wish they had all been real. The castle, lit up in all its glory, was simply breathtaking.
