Broccoli and White Cheddar Mac & Cheese « The Craving Chronicles
Mac & cheese. Oh how I love mac & cheese. It’s one of my favorite foods on the planet (besides chocolate). Whenever it’s cold outside or I need some comfort or I’m hungry or it’s a day that ends in ‘y’, I turn to mac & cheese. I’ve had to impose mac & cheese limits on myself to keep from eating it every day of the week. I love it so much I would run away with mac & cheese and never look back. Can you believe that until maybe 3 or 4 years ago I’d never cooked anything other than the boxed kind? Let me be clear: This is stove-top mac & cheese. It’s perfectly delicious and satisfying comfort food that will solve all your problems and bring about world peace. OK maybe not that last part, but it’s definitely delicious. Cheesy Chicken, Bacon and Avocado Quesadillas What is it about bacon & avocado that I absolutely love?? And these quesadillas… with their buttery, crispy, heavenly tortilla shells… are seriously yum. Scalloped Hasselback Potatoes “Scalloped” is an attractive word, isn’t it? When I hear it I think of several things: first, there’s scallops, as in the seafood—totally delicious. Then there’s the scalloped shape that can live on the edge of a pair of shorts or on the collar of a woman’s blouse—always pretty and dainty. And of course scalloped potatoes also comes to mind, which carries my imagination to a land of crispy potato skins drenched in a sea of cheese and cream. I can think of no better place to exist, actually.

Watermelon Lime Sorbet Slices A sweet and tangy watermelon lime sorbet is a great way to cool off in the summer. As a bonus, this recipe is frozen back in the watermelon rind and cut off into slices. It’s hot. The type of heat where when you step outside the door and your skin is wet before the door swings shut behind you. Ranch Potatoes Recipe Perhaps you are looking for a perfect side dish for the Holidays or to go with dinner, if so this recipe for ranch potatoes is perfect for you. This is a casserole dish that combines cubed potatoes with a ranch/cream of mushroom soup sauce, cheese, and bacon. Those ingredients alone should be enough to hint that this recipe is pretty good. I felt like I cubed the potatoes a little too big so I would recommend slicing the potatoes a little thinner.

And I’m ready for Thanksgiving. Eclectic Recipes & Grilled Chicken with Black Bean Salsa I’ve got another fun idea today to dress up ordinary grilled chicken. This chicken breast is seasoned with lots of flavorful spices (basically the same ones you would have in taco seasoning) and topped with a fresh black bean salsa. The salsa is also really good on it’s own. I added defrosted corn, fresh chopped tomato, onion and cilantro to a can of rinsed and drained black beans. Be sure to rinse the beans really well for this salad so you don’t have any of the gravy part of the canned beans in your salsa. I added this along with 4 more great grilled chicken recipes you can find here on the Best Grilled Chicken Recipes page at Tablespoon.com.

HOT CHOCOLATE ON A STICK recipe If you’re new here, welcome. I’m AmberLee, and since writing this post, I’ve opened up a little chocolate shop. I’d love to have you stop by, don’t forget to send me a hot chocolate flavor suggestion. Or say hello on facebook. I’d like that too. NOTE: If you blog this recipe, I’ll be thrilled and flattered. Speed tip: Make individual portions in freezer bags Although it might be nice if I were organized enough to plan out all of our dinners and my son’s bento lunches in advance, that’s never going to happen — not my style. I operate from more of the spur-of-the-moment approach to cooking, so it’s essential to have a well stocked freezer and pantry. One drawback, though, is that if I’ve frozen food in big blocks, I can’t use just a bit quickly without defrosting the whole thing. Enter my Japanese-language freezing books . A standard tip for freezing ground foods or thick sauces in small portions is to first put the food into a large freezer bag and press it out as flat as possible, eliminating air pockets. (Making it thin speeds up defrost time due to the increased surface area, and pressing out excess air guards against freezer burn.)

Cheese Pinwheel Rolls Sooner or later, all my conversations inevitably turn to food. Don’t believe me? Call me up sometime and try to, say, sell me some insurance. Garlic Butter Rolls › shutterbean For those of you who swoon over garlic twisty bread but can’t bring yourself to order whole pizza to make the delivery worthwhile, this one’s for you! They are scrumptious! Dip some in marinara or serve them with a salad and pasta! You could also eat them alone, directly from your kitchen counter. No one will know. Promise. "Indulge" With Dairy-Free Spinach Stuffed Shells I can pack away some serious stuffed shells. Cheesy, warm and delicious, stuffed shells are the ultimate comfort food out there in my opinion. They’re also a great make-ahead dish for company. Whose eyes don’t widen when they see a huge pan of shells coming out of the oven?

Meyer Lemons — The Salty I owe a debt of gratitude to Moroccan cooking expert Kitty Morse. After all, she’s the one who taught me just how easy it is to make my own preserved lemons. How easy?
