Mid-terms are upon us! Can you feel it in the air? I sure as hell can! I’m trying to remain calm, though, and think about how I’ve only got NINE weeks of school left until I’ve got that coveted bachelor’s degree. That’s it! This is my first attempt at what I’m sure will be a regular side-dish in my house as soon as I perfect it. Your ingredients. Put your potatoes in a pot and fill with enough water to cover. Remove the potatoes from the water when they’re ready and place on a greased and/or lined baking sheet. Top with cheddar cheese, sour cream, bacon…whatever you like! Enjoy! Corn and Basil Cakes If you are anything like me, you can’t get enough of the sweet corn and basil available at the Farmer’s Markets right now. I always buy too much, I can’t help myself. This is an incredibly thoughtful way to use up what you might have left over. These savory corn-and-basil pancakes served as side dish with barbecued chicken or grilled steak are so good, you won’t be able to stop eating them. They are packed full of corn and the basil gives it a sweet, fresh flavor. Whisk flour, milk, eggs, 1 Tablespoon oil, baking powder, salt and pepper in a medium bowl until smooth. The sweet potato dish I'm interested in is closer to a gratin, with a big push towards the savory to play off of the natural sweetness of the potatoes. Creamy Tomato Soup with Grilled Cheese Croutons It’s been a long, long week. Some weeks just seem to drag on, don’t they? I tried to get as much sleep as possible to perk me up during the day, but I suppose that my body isn’t used to it and it has just made me feel sluggish instead. I’ve made tomato soup before, but it just wasn’t quite what I wanted it to be. Your ingredients. Peel your garlic, place them in a tin foil “packet”, and drizzle with some olive oil before closing up. Do the same with the shallot or onion. Core your tomatoes and drizzle them with salt, pepper, and olive oil. Chiffonade your herbs and set aside. Remove your baking sheet from the oven when ready. Add in the herbs and puree, then add in the cream and the pinch of sugar and the salt and pepper to taste. Strain the soup through a mesh sieve to remove any bits that didn’t get pureed. Slice your bread for the grilled cheese. Toast the sandwiches on both side until golden. Cut the grilled cheese into cubes or serve whole, it’s really up to you. Cook time: Total time:

A craving for quinoa and sweet potato cakes Do you ever have those moments where suddenly lunch becomes the most important event in your life? Surely, I spend most of my days planning, cooking, and photographing food, but this was different. Ginger Steak Salad I absolutely love steak salads, pretty much in any form. Here’s an Asian-inspired creation I whipped up yesterday while Marlboro Man and the kids were at the farm. I used things I had in my pantry and fridge, and wound up pretty much eating myself silly. It was so delicious. And it was really, really easy. You can make it, too! Olive Oil. Soy Sauce. Sugar. Sweet Potato Gnocchi with Gouda Cheese Sauce This morning I was looking at my home page and I realized that there is a lot of orange sweet potato and pumpkin going on. Considering the time of year I think it is very fitting. Maybe I should go red and green when Christmas comes around? I have never made a potato gnocchi before. First and most important you need 1 pound of sweet potato. In the photos I as preparing a double recipe so that is why you see so many potatoes. Pierce the potatoes with a fork. Microwave the potato for 5-6 minutes on each side, until tender. Slice the potatoes in half and let cool. Scoop out the flesh of the potatoes and mash, you need 1 1/2 cups of mashed potato. Add Parmesan cheese, brown sugar, 1 teaspoons salt, and nutmeg; mash to blend. Mix in flour, about 1/2 cup at a time, until soft dough forms. Turn the dough out on a lightly floured surface, knead a few times and shape into a rectangle. Here I divided the dough into 6 equal portions because, like I said, I was doing a double recipe. Potato Gratin My favorite dish at this year’s Thanksgiving dinner was this Potato Gratin recipe, courtesy of Frank Stitt’s Southern Table. Stitt’s cookbook has been very reliable, it is also such a beautiful book that I enjoy flipping through it whenever I can.
